Is there a simple list which shows the availability of certain classes and/or races? I have heard that some races are restricted or not yet available to play as for PFS. I am wanting to roll up a Hunter, but with one of the more exotic race choices. How can I find out whats accepted for PFS. Thanks!

I have read and printed the guide, and just reviewed the other page you listed, but was just hoping for something simple that was printed out that showed all available races and classes. Like a simple sheet.
Classes: Barbarian, Bard, Cleric, Druid, etc etc etc.
Races: Dwarves, Elves, Halfling, etc etc etc.

Well, step 1 for PFS is that you must own the book with any rule content you want to use. If you own the book that the exotic race you want comes from, you can look up that book on the Allowed Resources page.

Did you scroll down to the bottom of the page? There is a list, book by book.
It is not a simple list because in some cases, a class or race is allowed, but not some of the abilities or archetypes. Some races are allowed if you get the boon on a chronicle sheet and so on.
But as far as I know, that's the list.
Btw, the PFS book lists the few legal exotic races you can use. The others require that you have a PFS boon that allows you to choose that race.

Races: All core races (that is: Dwarves, Elves, Gnomes Half-Elves, Half-Orcs, Halflings, and Humans) along with Tengu, Wayang, Kitsune, and Nagaji. Other races require that you have a boon from a chronicle sheet.
Classes: No Ninja, Samurai or Antipaladins. Several different archetypes are banned, but seriously, look through additional resources, and you'll find which archetypes are banned.

Ninja and samurai are most certainly PFS legal. All of the base classes are allowed, but certain archetypes are banned, like master and synthesist summoner, or hex channeler shaman.

Doesn't Paizo run PFS? If a race or class or archetype is too "broken" for PFS, why do they release it for Pathfinder in the first place?
It just seems so arbitrary, especially how they juggle what is and isn't legal every season.

It just seems so arbitrary, especially how they juggle what is and isn't legal every season.
There are many things in the books that makes sense for a certain setting, story, factions etc.
Like red mantis assassins, evil races.Some like the synthesis summoner or master summoner, makes a lot of sense flavor-wise, but from a game mechanics standpoint they may just be too powerful or time consuming (etc, 20+ summoned pets) for PFS play.

It just seems so arbitrary, especially how they juggle what is and isn't legal every season.
So a few things:
1) Not everything disallowed from PFS is disallowed for reasons of balance. Some are disallowed because of the unique play environment of PFS, which involves being able to move freely between tables. Others are disallowed for thematic reasons, to maintain a particular tone and cultural environment at games. Still others are disallowed because they result in a large amount of GM adjudication which is inappropriate to PFS, or because they can take a very long time to resolve at the table, which is unfair to groups that haven't agreed to that sort of slowdown (see: zookeeper builds)
2) Some archetypes, classes, and races aren't designed with PC's in mind, but rather as GM resources to create flavorful, varied, and powerful NPCs. Red Mantis Assassin, is clearly a class that was created to make enemies of that sort work. It turns out that it also becomes a player option because the rules for PC's and NPC's aren't all that different, but given the generally 'heroic' tone of PFS, a lot of these 'NPC Rules' aren't appropriate in that environment.
3) PFS is a specific game with a specific set of rules and house rules. They will be different from the rules and house rules at your table. That doesn't make either invalid, and it doesn't make Paizo creating products aimed at both the PFS table, and at your table 'arbitrary'. Similarly, just because that Venn diagram isn't a circle, doesn't mean that there's a problem.
