I am signed up with Dexter & Salazar, a level 4 druid. However, it looks like we have a wide variety of leveled characters signed up. If we end up playing at the low tier I also have Micah Elum, a level 2 bloodrager.

Dexter does not need any of the offered items, he has plenty of those alchemical items and doesn't use arrows. I say let the lower level PC's have most of them, they are the ones with the least money available to spend on stuff like that.
GM, have you tried to contact any of our missing players? It appears we have a fourth that posted in discussion but not yet in gameplay and the excel sheet shows us to have a fifth as well.

November 3, 2019 is the official end date.
However, games regularly go over due to slow play, absences and sometimes server issues. So if it isn't done, they usually request it to be reported as finished and then the game continues along and when actually done, chronicles are issued as normal. If any changes occur after the reporting (character death, different prestige awarded, etc...) then an email is sent and the organizers try to get it fixed on the back end.

Obviously I've been less consistent than I would like to have been; there's been a lot of curves thrown at me, personally and professionally.
I can skip the optional encounter, but with a... gimmick in the scenario, I would suggest that I narrate through the other mid-scenario encounter.
If people have another scenario lined up for shortly after the "convention," narrating would be our best bet of running only slightly over.

So about this con damage that seems to be ticking away on a couple of us. Is there anything that Dexter can see now that he is awake?
The original description seemed to be a pellet that burned like acid so I was visualizing that maybe the stuff is still eating away at them? But if not visible, no worries.
Second question, do those afflicted keep making Fort saves each round or just the first and second rounds?

It's a pellet that dealt acid damage, but the impact also releases spores.
It is a Disease effect that proceeds at a poison-like speed.
