My plan for character creation was a 25-point buy, starting at 2nd level (gestalt), standard WBL (so 1000 gp), and the usual two traits. You don't have to pick a campaign trait if you don't want to, though it is, of course, encouraged. I'm pretty open to third-party stuff, just run it by me first.
One thing I should note is that Reign of Winter is a very varied adventure path, so you'll probably want to use your two different classes to increase your versatility. I'll tweak things to not be impossible for you, of course, but I'm not going to eliminate entire plot points, so you'll want to be able to handle everything from wilderness survival to diplomacy to countering witch magic if you can.

I was thinking of running him as a Harbinger on one side, with the Omen Rider archetype. The Harbinger is geared mainly towards fighting multiple opponents at once, and is very mobile. Fluffwise, the ghostly horse followed him on the road home from the war, and he's slowly become familiar with it. He feels like it's the spirits of his dead comrades in arms that have come together to form the horse.
Harbinger is quite conductive to fighting multiple opponents, it's very mobile, and . I figure that'll help me close in with the spellcasters, and if nothing else, the movement speed will help me run away. I hope you're okay with the class.
I was considering running Ranger on the other side, to give me some archery feats, for shooting down pesky fliers, full BAB, and expanding the skills a little.
It also gives me access to wands of Cure Light Wounds, eventually, which helps with the stamina thing.
Do you think I should go for more magic? That's the main thing I'm worried about.

I'll have to give Harbinger a look-over after work, but it's probably fine.
More magic will almost certainly make things easier, especially something that gave you access to healing at low levels. There are a lot of built-in NPC companions in the AP, but they're pretty much all martial types, so you're pretty much bringing all of the spellcasting in yourself. The first couple of levels will be particularly painful before you can use that CLW wand.
That being said, if you'd rather not go for more magic, I can try to work in more potions of CLW and such to make things less painful for you.

I gave him a statblock, and settled on a name.
Theodric Kane is the apparent last survivor of his military unit. They were overrun at their forward base on the Quadiran border, and Theodric only survived because he fell unconscious on top of a pile of his dead comrades.
He woke up a day later, and started the long walk back to his hometown in northern Taldor. He'd left his wife behind when he joined up.
According to regulations, he should've reported to the nearest commanding officer. But by the time he remembered, he had already made three days journey north, and de facto deserted from the army.
Then the horse showed up. He got used to having it around - it was company on the road.
He shoo'ed it away before walking into Heldren, looking for an inn to stay at. People probably wouldn't take well to a man in tattered clothes, carrying a sword and a bow evidently taken off of a dead Quadiran, and riding a ghost horse.

Sounds good. I haven't had a chance to look over Harbinger yet--Wednesday evenings are often busy for me, and I didn't have the time. But I don't anticipate having a problem with it.
Oh, a hint--knowing Draconic will make certain points of this AP easier. Just in case you're wondering what to do for languages.
