Eh, bladebound or kensai is probably about right, but since you lose spell combat when wielding a two-handed weapon it's iffy. The whole mako infusion thing reeks of some kind of bloodline or template. There really isn't a PC-playable analogue, but you can get somewhere in the ballpark with that.
Eldritch knight is another possibility. Now that I think about it, that's probably a better match.

Well all versions of him are basically the same, but Kingdom Hearts probably has the version of him that has the most show of abilities.
Well we have one winged angel version from Advent Children.
We have the final boss version where he has an attack that literally makes you put down the controller and go make a snack while it finishes and has legs made from the wings of swans.
We have the shirtless badass version who primarily exists just to get all limit breaked on.
But you asked for Kingdom Hearts version.

I'd honestly go Eldritch knight with this one. He's definitely got a "full caster" vibe going for him who only carries the sword if you get up in his grill.

He definitely needs lots of arcane casting power and melee ability. I'd say something like a magus, but the magus' spell casting just isn't powerful enough and he melee ability isn't up to snuff either.
Eldritch knight is a bit closer, but really a gestalt wizard/fighter is probably the only way to get anything truly close.
And, let's remember that until Sepiroth fell into the Mako stream he actually wasn't that powerful. He was strong, but his magic was virtually non-existant.

What lvl is he supposed to be?
It might make suggestions easier, but that's a personal thought.
Tiefling seems off. He was a human/alien hybrid, so fluffed i'd go with Aasimar if you want him something other than human.
But human would be a flexible build like always.
This is just a personal thing if on magus without gestalt:
Human:
Str 16 [14+2](Guy was strong)
Dex 14
Con 14 (the points you had to beat off this guy)
Wis 8
Int 14
Cha 12 (he fought more than intimidate)

I know very little of the character after his FF7 appearance, but I'd say that in his earliest chronological appearance (the visit to Nibelheim) I'd build him as a Ranger using the two-handed-weapon style, and probably the Infiltrator archetype. Say, level 13 with the same sort of super-elite stat block Karzoug got.
Trouble is, then he discovered that he had an Aberrant bloodline, and dipped into Sorceror, and started gaining mythic tiers and all sorts of bizarre stuff that PF really wouldn't be good at modeling. Ordinarily if you're already a high-level martial, there just isn't any way to get to the reality-warping tiers of arcane magic.
A shame that he probably never had time to create a scroll of that make the sun go nova and wipe out entire planets just to inflict 9999 damage on three people spell, because I would totally take Use Magic Device for that. I adore overkill.

I'll flesh out my earlier build: Aasimar and EH Abyssal is there to represent his being a child of Jenova. It gives him some magic for early entry into EK, and once he gains enough levels, Abyssal gives the huge STR boost. Fighter with early entry into EK is for his more martial period. He is getting magical ability at this time, but he isn't using it, just using his martial side and adding Eldritch Heritage to gain the Abyssal . Then he falls in the mako, and starts using his caster level, and then goes into DD to boost HP and STR further, while still advancing Martial and Spellcasting. Dragon needs to be refluffed, but it fits since Jenova is an alien abomination, Celestial/Demonic/Dragon works.
