So after talking to my GM I think I'm going to run a character idea I had a few years ago. I never had a chance to execute and in this up coming game he would fit perfectly in to
He is a Dwarf Barbarian
Who is searching to create a Divine Brew cause he has been Cursed to never get Drunk off mortal Drinks.
I plan for him To two hand a earth Breaker , taking feats like power attack and such
My question is should I play him as a regular plain Barbarian, take any aechtypes or should I go unchain. I know its up to me at the end of the day but id like to have a few options to to choose from

well - you had an idea and now you have to determine how central it is to the character and how it will motivate him. How would the desire to create a great fermented drink drive him to be a barbarian?
Barbarian gets craft as a class skill but not profession(brewer) skill. Brewing beer (or any ethyl alcohol beverage) in general requires a static location and some invested resources, along with a supply of grain & hops and/or corn. Like sour dough bread, things can go wrong and they usually are not good. So it's not a good mechanic or thematic fit unless it is a hobby and you are fermenting a skin of chewed yuca. In RL it is a temperamental process and needs controlled conditions. Brewing a bad or foul brew is easy, a mediocre brew takes some skill.
"never get Drunk off mortal Drinks" as a (Home GM) curse does not meet the mechanics requirements for Oracle.
You might try shaman(lore or tribe) if you are trying to stay tribal. Unfortunately multiclassing doesn't work well with shaman either way (into or out of). More thematic dwarven options: Cleric(Caylean) might be better and then why not War Priest?... If you are besotted on Rage powers then Skald is your multiclass.
There is the monk arch drunken master, alchemist arch mixologist, and brawler arch tavern brawler (most natural choice) but they're not very effective.

you might want to work with your GM on a story feat. Story feats have added rules beyond normal feats, but also tend to give more once solved. (see the link for more info.)
specifically the 'accursed' story feat.
As for the type, I would go with unchained Barbarian over base barbarian any day of the week. the fact the rage extra hp are temp and not con based mean that if you fall under 0 hp while raging you don't automatically die if your level is too high.
When you fall unconscious you stop raging and the con of base barbarian drop too much, the loss 2 hp per level , or more with greater rage, is fetal.
for example a raging level 10 barbarian that fall under 0 hp will automatically lose 20 more hp, which mean his total hp might very well be below his now even lower con mod. and at level 11 it jump to losing 33 more hp in one go from greater rage +6 con.
which mean that unless his pre-rage con stat is higher then 34, a level 11 base barbarian that drop to -1 hp while raging is dead.

A story feat is a good place to start. Accursed is good and you might also look at
Object of Legend or Magnum Opus. Any of these could give you a place to start. Work with your DM about the specific of how to tweak your feat to tell your story.

I would go with the tribe's ritual of manhood include getting really hammered. since he can't, every one keep calling him 'child' and such and he never get the respect and statues a grown up would.
Honor can be a strong plot hook even more then numeric bonuses.
'In our tribe it's not how much you can guzzle down, it's how hard it get's you down!'
(really, with rage stuff like how many fort saves you make can get boring after a while -you just sit there drinking with nothing happening, but how you deal with failing it? that can be entertaining!)

'If it doesn't kick you, it's just milk with a different name!'
