If I go to Red Lobster and order a red lobster, using the silverware isn't taking possession of it by common definitions, putting it in my pockets is probably taking possession of it, and leaving the building with it definitely is.

... Putting it on a library book would be pretty messed up, though.

AIUI no postal service, in any era, operated point-to-point. It's all spoke and hub. So unless you know everyone in the chain, it's not going to get it's intended target.

Unless, as has been discussed before, the spell can detect the difference between theft and legit carrying/transfer. But if that's the case, it still doesn't get the intended target because the recipient of a letter isn't "stealing" it, you are giving it to them.
