Hello, with remaster, for the spells, there aren't verbal, somatic, material, components.
For example, before, for blood vendetta, there is a verbal component but for the version from remaster, no verbal components.
So a creature is biting an opponent and can't use its mouth, can the creature cast blood vendetta spell ?
But p.299 :
Casting a spell requires the caster to make gestures
and utter incantations, so being unable to speak prevents
spellcasting for most casters.

Yes, the Player Core rules for spellcasting give all spells the requirement of being able to speak.
Using a bite attack wouldn't prevent spellcasting because the creature's mouth is only occupied during the time that the Strike action is being done. Once Strike is finished, and the creature wants to cast a spell, its mouth is available for speaking.
If it is a creature that has the Grab monster ability on its bite attack, or a player character that has the grapple trait on their bite unarmed attack and they are grabbing a creature with their mouth, then their mouth would be occupied until they are no longer grabbing a creature. Release is a free action though - if they really need to cast that spell.

Unless the spell requires a Loci, I think you can cast spells with your hands full. You can cast with your mouth full too if the GM rules that you can still speak while grabbing an opponent with your mouth.
Conceal Spell is for making the spell Subtle if it isn't already. It hides the spellcasting actions from being detectable - it doesn't remove them from applying limits on the character. So you still need to have a Loci if the spell requires it. And you still need to be able to speak and make gestures - Conceal Spell just means that observers won't notice the words and gestures that you are making.

To be fair, conceal spell also lets you cast spells while under the effects of silence, and it's hard to tell how that works if you still need to talk. It also doesn't feel consistent with how subtle spells still have the manipulate trait. The best I can come up with is you still have to literally go through the motions of moving your mouth and waving your hands around, it just doesn't look like spell casting or necessarily need audible words.

The Subtle trait is clear, even if the feats that allow you to apply it to your spells are not in their own descriptions:
A spell with the subtle trait can be cast without incantations and doesn’t have obvious manifestations.
No incantations, no obvious manifestations. There presumably still are some nonobvious as spellcasting gestures, and nothing here removes either the concentrate or manipulate traits, so you must be doing a casual handwave or Clintonesque thumb point or miming an awkwardly timed panic dodge that makes you eat an AoA as part of the casting.
