I apologize if this has been answered before, but I could not find it. I am just finishing a multi year run of 1E's Mummy's Mask and starting prep for my next campaign. I have not played 2E at all yet. Not knowing better I have purchased the Remastered Player and GM Core books with Kingmaker 2E. As it takes my group about 5 years to finish a AP, am I better off keeping the AP 2E or convert it to 2E Remastered? This appears to be a much bigger deal than 3.0 to 3.5 conversion was.

There's no Remastered conversion. You need creatures from the previous Bestiaries (as usual) or AoN. There are a couple of renamed spells that you need to look up in the Player Core under the new name.
What Remastered changes for you as a GM is the removal of Alignment and addition of Sanctification, a couple of additional actions for monsters in combat and small crafting changes. It's nowhere close to the 3.5 changes.
PS: When I started to read through the Remastered books, I was really disappointed. The text is the same on almost every page, the rules are still laid out kinda badly. As a GM, I think if you own the previous CRB, buying the Remaster is a waste of money. It's really just paid errata.

It was really difficult to get across to folks that this was always the intent. The remastered books are NOT a new edition. It's the same game, but with the OGL elements removed and replaced. We also went in to do some extensive errata-level adjustments, and in some cases the removal of OGL content meant creating brand new content, but... it's still the same game.
AKA: You can run Kingmaker in its 2nd edition version perfectly well without need for a conversion document, especially if you're already familiar with how to play 2nd edition Pathfinder. There'll be a fair number of spells and magic items and short stat blocks for monsters that, if you ONLY know the remastered books, will be unfamiliar, I guess, but if you're familiar with 2nd edition Pathfinder's OGL rules, you'll be fine.
The Remaster rules were NOT an attempt to cash grab, and in fact their production threw Paizo into chaos since we had to do something ASAP in the wake of the OGL crisis of January 2023, and my hope is that with each day that goes forward, folks will grow more and more used to the idea that all the 2nd edition product produced before 2024 is still quite usable in a remastered game.

Thank you for making this more clear. Being a new player to 2E, I think I will learn the Remastered version as it is what will be going forward. That being said is there or will there be a document listing the name changes?
As an official document from Paizo, I don't believe so. The logistics of how to publish names we can only publish when we use the OGL in a way that allows us to make it an ORC-compatible license to use remastered content is... complicated.

I, for one, would be grateful for a simple list of OGL terms that will not be used by Paizo in the future.
That, at least, would allow me to quickly verify where I need to make adjustments to previously published materials.
Because Paizo did not simply "file off the serial numbers", and there is no 1-to-1 correspondence between the off-limits OGL material and the new directions Paizo is going, I have no expectations that there will ever be a "name changes" list.

I have used AON to pull stat blocks for encounters into Word files to (a) centralize them, (b) adjust for 6 players and (c) apply Remaster changes. I'm not far along (players just arrived at Oleg's Trading Post). But at least in the first bit, there's really very little conversion. No adversary spellcasters, so all I'm really doing is pulling alignments.

I was just talking with some fellow PFS players about this, and because such a list would be SO useful -- and yet has been produced -- we concluded it must be an legal thing. Like, how can you put terms that are OGL and terms that are ORC in the same document without inviting trouble? Obviously I am not a lawyer, but it kinda seems like you just...can't.

Personally, I think of it as 2.25. Bigger than I first expected, as it does make some changes that clearly weren't forced by the OGL fiasco, but at the same time it falls short of the scope of the 3->3.5 changes.
Some of the not OGL-related things to look out for:
* Cantrip damage was changed
* Grab now requires a check
* Abilities are replaced by modifiers

I do expect there to be a fan-driven internet resource at some point once more remastered books are out, but that's not something I have the time or energy or capacity to help produce.
I want to take a moment to give a shout out to all of those fans who create the sources that so many of us use.
It is awesome to watch people hyperfixate on the rules and the details, and spend so much time and energy into putting all of that intellectual work into a format that the rest of us can understand.
Thanks for making the fruits of your talents so accessible. And for adding so much to the conversations on these forums (and elsewhere). You all add so much to the game. I'm so glad you're part of our community.

Someone, somewhere, did indeed have a list of spells sorted by "Changed name, same mechanics" "Changed mechanics, same name" and "Replaced by different spell" way back in the earlier days of the remaster, so the details may be sparse but there was something.
Can't seem to find it right now, but there are surely dedicated fans out there working on something like it as we speak.

There are several, but the one I tend to use is Foundry VTT's.

We intend to run this at some point in the future (when I wrangle another player) and plan on using the remaster as errata and, in some cases, better versions of the OGL rules. For example, crafting is better, the Aid action is better, and some other minor changes.
Most of the other changes can probably be handled on the fly from what I've gathered so far. For that matter, our current run of QftFF hasn't been impacted much at all.
