I'd try a spreadsheet, with formulas that include level. Most scores that you'd want to look up are going to be (proficiency bonus + level + ability + item) or something like that. The level goes up by at least 1 for almost everything on your sheet. So upping that each level by hand would be so tedious.
You could do most of the calculation and inputs on one sheet, and have an easy to read summary of it on the next sheet. Then you only have to print the summary sheet.

Path builder 2e has option to export your character sheet as a NPC style stat block which seems to check all the boxes here.

Just wanted to second this as that's how I do it.
For PFS I've used a grid that the players fill out. Needs will vary by adventure, w/ "special senses" maybe the most important! It takes half a page typically, so I use big boxes so they can fill in big, easy to reference numbers (or scrunchy numbers for knowledge gurus that have a long list to fit in).
With a home game it'd likely have to be more expansive as it might be used over various scenarios, but I wouldn't include a lot of generic things like basic stats or numbers rarely rolled by the GM (where you can ask if necessary, but you'll hopefully know what kind of stuff is coming to get the numbers beforehand, right?). I'd limit it to secret rolls, maybe Saves for unknown afflictions, and similar things. Half the space would be Recall Knowledge skills.
ETA: Which is all to say I think a generic PDF might be too dense if it's trying to include too much, though it'd make a good baseline to trim.

This is what I do for PFS as well. I incorporate it into the sign-in sheet, which would probably work great for homegames, too:
• Player
• Character
• AC
• Perception
• Exploration
• Lores
I literally rip out a piece of lined paper, rotate it landscape, draw vertical lines, label each section, and pass it around the table.
That would be the least amount of work for the GM.
I do this systematically.
I make a word file with collumns for AC, hit points, saves, perception, stealth and a few other skills and bonuses (spell attack rolls, etc) and update it each time the PCs gain a level.
Print it out before each session.
Also has lines below to track initiative, and below that adversaries and their initiative, damage and conditions.
Really saves time, especially for secret checks.
