That's why this is not in the rules arena.
The only real hitch is both Sleuth and Steel Hound replace Swift Alchemy... here's the thing, though. Both replace it with Deeds.
Could I just kind of, you know, add the single Steel Hound Deed (Blind Shot), with the list of Sleuth Deeds at 4th level?
Would that be too much of a stretch/bending of the rules? They're both just Deeds...
I think I have something cool cooking, and adding Steel Hound even semi-legitimately would be super thematic.

So... say this build inolves a few levels of actual Gunslinger...
Sleuth's Luck is Charisma based.
Steel Hound/Amateur Gunslinger is Wisdom based.
So, these are the same Pool, being contributed to by two ability scores... exactly like an Inspired Swashbuckler's Inspired Panache... I think, that's how that whole interchangable Pool thing works.
That whole aforementioned interchangable Pool thing also says two Pools based on the same stat do not stack/double.
So, my question is, would it be advantageous to use a Charisma based Gunslinger, to at least only have one stat to even halfway worry about boosting? Sleuth Investigator is still Intelligence based, even with a Luck Pool based on Charisma. Adding Steel Hound adds a Grit Pool based on Wisdom.
Now, taking levels in actual Gunslinger replaces Amatuer Gunslinger with Extra Grit... so if my Gunslinger's Grit is Charisma based, then we remove any actual dependency on Wisdom. Still useful for Will saves, but as an Investigator, we at least have good Will saves.
Wisdom is never a dump stat for me, so there will always be a positive Wisdom modifier to contribute to a Pool. And I need Charisma to contribute to Luck from the start. Is it better to be MAD, but at least have lots of small modifers contribute? Or, drop all reliance on Wisdom, rely on a small positive modifier but good Will save, and put Luck/Grit on Charisma?

I'm not sure you get to combine the feeder stats, I think you might have to just choose 1.
In that case, I should absolutely choose a Charisma based Gunslinger then, right? That way my Grit/Luck Pool is all on the same stat.
However, the way Grit, Luck, and Panache are explained... it says nothing about multiple stats contributing to the Pool... but it DOES say that having two Pools based on the same stat do not double.

You do get both stats to Grit/Luck/Panache. They both have a minimum 1 clause as well (so 14 WIS and 7 CHA would get you +2 WIS and +1 CHA, as an example). If you took a level of Inspired Blade Swashbuckler as well you'd have INT+WIS+CHA to your pool.
You don't get to stack the same stat twice though, so if you got +CHA to your Luck and +CHA to Panache you wouldn't end up with 2×CHA as your pool.
If you simply wanted to maximize your pool you're probably better off spreading out your stats as evenly as possible, but if you're getting other benefits from those stats you might want to specialize more. Considering the difference is probably only 1 or 2 points I'd say it peobably isn't going to matter all that much so go with the one you like.
