The pathfinder 2e rulebook that is on backorder (bought this on humble bundle in July) but it is available at amazon from what appears to be Paizo. Anyone else a little irritated by this. If this amazon sale is not paizo let us know.

On the right side, just under the "add to cart" button, you can see who is selling the item, and whether or not it's being drop-shipped from an Amazon warehouse.
If you want to buy directly from Paizo, you do it from this website.
Otherwise, you're dealing with stores/businesses who buy their copies from a middle-man/distributor and then sell them on to you.
As Rysky said, it's no different from your local gaming store having copies in their back room even after the item is sold out at the Paizo website.

I'm curious why you thought Paizo was selling their product on Amazon instead of a distributor or some third party retailer?
Physical books sells typically go from producer/publisher to distributor to retailer. We are lucky enough that Paizo has an online website we can purchase from directly rather than dealing with middle men (assuming you want to directly help Paizo).
However, when retailers and distributers have copies taking up inventory space and want to clear out a book that they have copies of they are more likely to put it on sale, as each physical copy represents a loss until sold. Even if they are selling the book at the price they bought it at it can be worth it.
