Oh this is FANTASTIC news. And here I thought you weren't going to do it! Great to hear you guys are going forth with this, everything I've read of LP has been cool as hell - and now that I'm moving to only GMing 2e, I can actually do it!

Count me in! Will there be another big compilation at the end or should I pull the trigger for each book?
Sorry for the extremely late response!
The short answer is... maybe.
We're committing to do the first couple of adventures, but after that we'll have to see how sales play out. Thus far, adventure sales for PF2 have been pretty hit and miss. If sales are solid, we'll keep on going. If they're not, we'll probably wind up the series early rather than doing the whole thing.

Did I see something about Legendary Heroes for PF2 making an appearance at some point?
We might very well do some class expansions and things like that line for PF1. We're also doing some PF1 class revisions into PF1. Our kineticist has been very popular, and we're getting ready to release our PF2 take on the mesmerist as well. We also have a new class, a witch variant called the cabalist, which is coming soon.
