I dont see anything indicating that you cannot trip an ooze in any of the oozes statblocks, the ooze trait or the trip action. Most oozes are at least large sized meaning you would need titan wrestler or some similar ability to do so.
That is certainly weird, but I suppose a trip for an ooze could just be flattening it out a bit.

Why would you need Titan Wrestler (assuming we are talking about a Medium sized PC vs a Large Ooze?
Trip requirements: You have at least one hand free. Your target can’t be more than one size larger than you.

They are immune to the prone condition so you cannot trip an ooze. I do think it's odd that flat-footed isn't listed amongst their immunities
edit: I'm wrong. Must have been remembering a different stat block. I don't run it with that immunity though, because it's pretty absurd

It's a lot like grappling a swarm. Nothing in the immunity rules of the creature prevents it.
It is silly enough narratively that I wouldn't be shocked if it isn't allowed to actually work in game, anyway, but there are no official rules preventing it.

So... did Paizo just forget to finish the statblock for Ooze then? Kinda makes you wonder if anyone actually proofread this game.
A lot of things seem left to 'Dm fiat' intentionally so it's hard to say when something was overlook and when it was left out for a reason.
As to it not making sense: it could be an attack that flattens out the ooze and forces them to reform enough to act normally. That, IMO, emulates being knocked to the ground fairly well. In a similar way a snake can be tripped by seeing it as knocking it on it's back and forcing it to regain it's attack posture. [snakes seem as vulnerable to trip as oozes]
Another thing to think about is the rules make no mention of feet/legs in prone/trip. In fact you can knock prone flying/climbing creatures so that means you can trip a bird in flight...

It actually is covered in the rules just in an odd place. Emphasis added.
You can attempt to trip your opponent in place of a melee attack. You can only trip an opponent who is no more than one size category larger than you. If you do not have the Improved Trip feat, or a similar ability, initiating a trip provokes an attack of opportunity from the target of your maneuver.
If your attack exceeds the target’s CMD, the target is knocked prone. If your attack fails by 10 or more, you are knocked prone instead. If the target has more than two legs, add +2 to the DC of the combat maneuver attack roll for each additional leg it has. Some creatures—such as oozes, creatures without legs, and flying creatures—cannot be tripped.

There does seem to be not much in the way of immunity to trip. I found only 2 monsters. There is nothing in the Ooze creature trait.
It really does seem like something they should have put into the bestiary.
I'm happy for creatures without legs to be immune to trip, but not happy to see flying creatues immune to it - I presume they mean creatures that are currently flying, not creatures that can fly.

Swarms are actually immune to the Grappled and Restrained conditions.
Also Delmoth, those are the 1e rules...
