Does a GM running a full Adventure Path in campaign mode need to stick to the party size for which the AP was built? What's the leeway on how many (or few) can join?

In campaign mode? Entirely up to the group. When everyone shows, we have seven in our Iron Gods game.

That's a really good question. I'm currently GMing Plunder & Peril in campaign mode and made sure to have 6 players in case 2 drop out. I thought there had to be a minimum of 3 players and a GM for reporting purposes. And I think the max for reporting a session is 7 players.

If it is possible to run and report a sanctioned module or AP in campaign mode with a GM and only 1 or 2 players, I'd be ecstatic.

See, that's what I'm wondering as well. Campaign mode is outlined as distinct from scenarios in the Guide, well after the stipulations about legal table size.

Here's a thread from the summer of 2016.

Consensus seems to be that there's no minimum or maximum number of players when running sanctioned APs in campaign mode.

In the Iron Gods game I mentioned above, not all of the players want Chronicles; I believe I reported one book with just two players.

Yep, you can run in campaign mode with only 2 players. I've done it (playing with my kids), with me running two extra characters to fill out the party.

Well, some of us are in their later years. So, why not GM for our kids, foster children, young students, nieces & nephews, etc...

It is not uncommon.

(Btw, I just turned 50! Celebrating 40 years of D&D and Pathfinder!)
