So, Saving Shield specifies, "Whenever an adjacent ally is the target of an attack, you can, as an immediate action, grant that adjacent ally a +2 shield bonus to AC."
If E = enemy
A = ally
C = character
Can Saving Shield be used literally in any square adjacent to the ally, regardless of whether it's anywhere near the enemy, such as:

I would think you would need to be adjacent to both the ally and the enemy, but that's not how it reads to me. Just wondering how others have implemented this? Thanks!

If it meant that you also had to be adjacent to the enemy, it would say so. Remember, "in context" people aren't really moving in grid spaces. The fight moves back and forth, combatants duck and weave... you can really consider a character to at some point be in almost every square adjacent to "their square" on the mat at some point in the round if they are actually engaged in active combat.
So when you get in the headspace of thinking of the fight as a thing that is actually happening, I really have no problem thinking of a character pushing/pulling their ally, briefly interposing between them and even an enemy on the opposite side, or however else you want to think about it.

Yes, per RAW, your EAC example would qualify for having your ally adjacent to you. Per RAW, Adjacent means occupying the 5ft square next to someone.
And just as Fuzzypaws pointed out, "The fight moves back and forth, combatants duck and weave", so just because you're on the opposite side of your ally, doesn't mean you can't throw your shield over the top of him, or come around either side of him to help block an attack.
