I've got «yes» or «no» answers from James Jacobs a couple of times. I was never able to ask him to ellaborate as I was afraid to be bothering him.I don't know how to react when I get short answers. It's a stupid thing, I know.

I have a few strong silent types in the family. You just got to read the body language to figure out their true feelings. Obviously, that is of no help on forums. You got no choice but to continue with probing questions there.

I bought new rain gear for wilderness trips last week, so I've been hoping to test it. Well, it was raining yesterday so I went out, but the place I chose only had a light mist, so I had to stay out in it for 3 hours to try and get a sense of how well it was working.
I ended up stalking some deer, a turkey and a raccoon for some bad photos (i'm not a good photographer and I was just using my phone). Needless to say I was tired when I got home. I opened up a bag of tortilla chips and a container of guacamole for a snack and it ended up just being dinner.
On the topic of ice cream, Jeni's is pretty good. I may pick some up this week to see if it's as good as I remember. The vanilla was super rich and flavorful, one of the best vanillas I've ever had.

Reading the James Jacob thread just makes me feel real sad for JJ. Also reminds me why I have a general (not specific) dislike for the general populace.

My favorite ice cream is probably this one.
My father's wife also does a very good homemade ice cream. I've never tried myself.

I'm on cup four of green tea. I just got in some delicious lemon honey to put in it. Fantastic stuff, if a bit pricey.

Make meringue (with confectionery sugar), add corn syrup and tons of extra (confectionery sugar, beat until stiff, and you probably have it... oh, and a splash of vanilla...
This is a newer recipe, but having seen an older recipe, once or twice (never actually made it) it called for egg-whites instead of that gelatin.

Corn syrup is so common in the U.S. it is scary. It is used to sweeten almost everything that is processed. I know several people that are allergic to corn, and it keeps them from eating a lot of foods here.
I have noted that they all have lost a lot of weight from cutting it from their diets. Possible connection, I think so.

Corn syrup is the devil. But it's darned near unavoidable.

Dalindra and I avoid buying anything that has it, we are very picky about it.
It's unhealthy for us and unhealthy for nature. They burn the jungles just to be able to buy them when they are no longer protected. It's sick.
As I cook at home and you can find products without it that are not more expensive, we don't have any need to consume it.
Sunflower oil is a mostly cheap alternative that many companies in Spain are starting to use.
Olive oil is my to go cooking oil, even if it's expensive. I don't cook with much oil so it's affordable anyway. But processed products with olive oil are prohibitive.
In sweet bakery I don't use olive oil (kind of a fashion here in Spain) as it has a strong taste and I'd rather use sunflower or butter that have a softer taste and don't mask the flavors.

A lot of people don't know that The University of Pennsylvania has a course in making Ice Cream. Here it is.

It's like comparing a McDonald's burger patty to a high quality steak made just the way you like it.
edit: might be a touch overstated. But homemade marshmallows are sticky, sweet, creamy, rich and light all at the same time. They're soft from edge to edge, no crusty shell.
My favorites have some lemon juice in them, you get that tart and sweet combination and it's great. They are sticky on your fingers, but just gooey in your mouth (don't stick to teeth/gums). You have to coat them in confectioner's sugar to be able to handle them (even then, kinda sticky). I've also had champagne flavored ones, which were complex and yeasty (I like that sort of thing, not everyone does though).

I already know how to make homemade Ice cream, and I still want to take that course.
