A planet hopping type of adventure. The adventure follows a Formian Colony-Asteroid and its cataclysmic effects around it's path.
Some of the effects could be
-knocking a rogue asteroid inhabited by hive into a mining station -causing a gravity shift on a small moon
-dispelling a gas nebula causing insane mutants or undead plague to start on inhabited location
-invading the territory of a space predator causing the entire habitat to go out of wack
-cause a solar system civil war because one faction believes it was a inter-planetary weapons attack.
These would probably be hard goals for the typically amoral characters gamers play (in my experience) but with colonization supposedly being a big thing in this setting I figure there is some sort of guild that could be the quest giver.

I would like to see a frontier exploration path, really use the old Star Trek mission statement "to explore strange new worlds, to seek out new life and new civilizations, to boldly go where no man has gone before."
Cross that with a bit of space western like Firefly/Serenity and I'd be all over it.

I would like to see for the first adventure path something like a scavenger hunt. The adventure would give a nice overview of the possibilities of the setting. Secret asteroid bases, ancient ruins on a far off planet, space bazzars and abandoned freighters to name a few possible locations. Encounters should also highlight some of the iconic races for the setting
That in short would be my idea.

Instead of using a static setting, how about the setting evolves naturally over the course of the initial 4-6 Hyperlane Campaigns?
Alternatively, building the setting one SFHC at a time. Regions 1-4 over the first 2 years' of Hyperlane Campaigns. Then fill in with intervening or overlapping events via easter egg stuff during the first 4 SFHCs.
This would require a MCU style development process instead of the process being used for Pathfinder. The only requirement in advance is the "public knowledge timeline" bringing Pathfinder Golarion to where Starfinder Golarion kicks off.
Deliberate design taking RotRL to CotCT to Shattered Star (SFHC 1's first follow-up is SFHC 5 with part 3 being SFHC 9).
Every 12th or 13th SFHC is a grand conclusion, wrapping up a block of in-game time before launching the next. Could be rough go to develop, but it'd sure change things up from current standards.

You know what I would really want is a section in an AP where we as PC's play defense. We always play as the aggressors I want to have a section where it's reversed. Maybe after we get a ship and modify it and add our little touches (you know as you do) we get attacked by space pirates and we have to stop them from reaching the bridge and the engine room, or maybe the vault because we have Mcguffin of supreme temptation.

Well, considering that this already happened in previews pathfinder adventure paths, I'm sure we will have to defend the bridge, stop the enemies from taking the station, protect a weapon until it's ready to fire, or even protect a place until the shields are back... Something along these lines.

Gold Sovereign what AP's have this? The only one I am aware of is in RoW's FS book and even then it wasn't their defenses it was the allies defense that the PC's are thrown at without prep time. WotR isn't so much a city defense as a city reclamation.
I'm wanting standing defense that the PC's build and are aware of before hand. Plus longer than single or double fights. By defense I mean holding off a siege, repelling the traitorous mercenaries you were told to work with but instead decide they want your ship or fighting off the assimilating aliens that snuck onto your ship after a fight and are taking it over.

As somebody who absolutely loved Iron Gods and who's group pretty much finished it as it was coming out a couple years back. Hell, Minor spoiler. At the end of Iron Gods we essentially decided to go Star Trek and seek out new worlds and all that junk backtracking the Divinity's crash on Golarion to find a certain important npc's home planet and get her home.
I guess exploration, Interesting places,Cool NPC's and awesome monsters ( I can't get over the idea of demons with chainguns) great adventure hooks, just really taking advantage of the sci-fi setting and how big the universe is for all kinds of zany hijinks. Kind of a Star Wars/Mass Effect feel would be what I would really crave. Mixing in Magic and High Tech and having them both feel just as valid.
What I felt was Iron God's strongest part was it's trilogy setup. Books 1 & 2 showed a strong narrative collection that bridged them seamlessly. Followed by 3 & 4 and finally 5 &6. Having an entire plot thread spanning over two books and handled fantastically was a welcome change from the single book plots and adventures in previous Ap's.
I might be rambling but just like-Really don't just make it Pathfinder In Space! Don't do what you guys did with the high level Demons on the Moon Module. Take full advantage, make it your own and tell a great story that cannot be told on Golarion.

I'd want some intrigue stuff! A planetary governor & his court are all secretly being controlled/manipulated by alien powers. Negotiating a truce between two civilizations that have been fighting for generations. Maybe some megacorporations playing dirty with one another in the ruthless pursuit of wealth on a galactic scale.
Problem is, I've already sunk a lot of money and time into systems like Warhammer 40k (esp Only War & Dark Heresy) and Mass Effect so Starfinder would *really* need to grab me for me to commit. There's not much in the way of space-fantasy that I can't do in either ME or WH40k.
