Hi I am interested in making a Martial Arts character who specializes in the use of the shuang gou to disarm, trap, trip, possibly sunder weapons. I would also like this character to do plenty of unarmed strikes.....

Did you see episode 5 of Into the Badlands? That was a great fight.
Those weapons are described in Ultimate Combat and already have the Disarm and Trip, and are Monk weapons so you can combine them with unarmed strikes.
The weapons gain the disarm special weapon feature when used individually. A pair of shang gou can also be formed into a single one-handed weapon to gain the trip special feature.
You're on your own for sundering, I'm afraid.

Sadly tho Pathfinder does not have rules for those types of weapons that can be linked Head to head and whipped around to make a reach attack unless you re-flavor Lunge or something...But I did love training with those swords when I studied Shaolin....its a weapon that is easy to use and always guaranteed to nick the wielder who is learning them. Like Chefs says...it's not YOUR blade till it takes some of your Flesh. I got lucky and only peeled a little skin off...I've seen someone Impale their Quad muscle with the Hand guard.

The first blood a blade tastes should be from the hand the wields it, that it may know it's master.
I generally avoid impaling my quads, but do nick my thumb with each new battle read sword I acquire, up to 5 now. Also, agree with Hazrond, badass indeed sir, badass indeed.
Actually flavoring Lunge via shuang gou as linking hooks ='s awesome!

Well, the Shang Gou can be linked per the rules. It doesn't gain reach, but it does add the trip feature.
Shang Gou: Forged in pairs, these solid metal blades end in curved hooks, while the hand guards are hammered into outward-facing spiked crescents. Both the crescent and the tip of the hilt are sharpened for combat. They can be wielded as single weapons or with two-weapon fighting styles. The weapons gain the disarm special weapon feature when used individually. A pair of shang gou can also be formed into a single one-handed weapon to gain the trip special feature.

In real life you can trip with just the hook...it was designed to remove a good off a horse....or cut/sever an achellies tendon. Linking them is hard to master but used as an AoE sweep. It would be extremely difficult to use them linked to trip without them coming apart due to change of momentum/force and the tug you need to do to trip.
Pathfinder tries to get it right but I'd definitely want to pull out real ones and show my DM the need to patch this weapon to have disarm and trip single blades...linking for a sweep/reach attack. I wouldn't go as far as cleave tho because after you hit something while they are linked its difficult to keep the heads together depending how hard you hit the target.
The guy who impaled himself was doing a downward 45 degree punch. He was supposed to be in a high bow stance...he went into a really low bow stance. The hand gaurd blade caught him above his tendons connecting his knee. If he would have been in proper stance..the blade would not get anywhere near his leg.
