Why am I not allowed to train my animal companion?

If my pet dies, and I get a new one, it'll come with virtually no tricks (just the bonus tricks from the animal companion chart). Or what if I take a feat like Monstrous Mount and get a new companion, I'm basically stuck with a companion with very few tricks.

I realize I can teach one trick per session, but that doesn't seem to be enough.

You can teach 1 trick per session, per rank in handle animal... Source

The only thing you can't do is come up with new tricks. You can definitely train up your new animal, though.

I said that. I also said 1 isn't enough.

For example, if I got a worg companion with 6 int, that's at least 18 sessions before his full potential can be realized. If I'm doing something like running through the emerald spire, he'd never learn as much as he could.

Its per rank in handle animal. Which means a level 5 character should have him up and running in 2-3 sessions.

Ah, that clears it up. I didn't read carefully enough and thought it was only once per session. I didn't realize it was once per rank in Handle Animal.

Are bonus tricks learned automatically? And it's only the tricks per intelligence point that need to be taught?

Yes and yes.
