Finally convinced Mom to try making her (and Dad's) first fajitas (chicken) for eat-over dinner tonight. It's from a boxed "kit", but that's still much better than no fajitas at all.


I got my corned beef and cabbage fix last night.
Before anyone gets on me about CB&C not being a traditional Irish dish, it is a traditional Irish-AMERICAN dish. I know because my great grandmother was born in Ireland and grew up in Chicago. It's because of her that I've had CB&C every St. Patrick's day my entire life without fail.

The other family tradition, from her husband (Italian immigrant) is lasagna on Easter. Can't wait!


I made corned beef hash for breakfast this morning from some of the leftover corned beef and potatoes from St. Patricks Day. Served it with toasted Irish soda bread and poached eggs. Mmmm...

Of course, now I feel so lethargic, I'm on my fourth cup of coffee to stay awake.

I received a summer sausage today, but it wasn't an ordinary summer sausage. It also had ham, bacon and mozzarella cheese in it.

No, but I slow-cooked pork jowl earlier in the week. I separated the meat from the fat, and cooked down the collected fat to make cracklings. It also made about half a cup of baking lard. I'll probably use both to make crackling biscuits later this week.

We celebrated Spring with the first trip to frozen yogurt this year. I put way too many toppings on mine. Also treated myself with new hairs. I am determined to enjoy the sunshine :|

Oof. What a week it has been. Today I rode my bike around at lunch and had some watermelon. Super excited for them to officially be in season :)

Okay, I have a very, er, unlaundered mind. 'Tis the season for watermelon romance!


For some reason, I suddenly developed a rather nasty allergy to watermelon a few years ago. Still love 'em, though. Enjoy, you lucky people.

I baked stuffed peppers and stuffed peppers last night. They were a bit bland, but some Sriracha helped with that.

I'm still stunned they went with Bergoglio over the Vegas odds favorite, Sarducci.


This past week I learned to make a Moroccan spinach salad. It's delicious (assuming you like things like spinach, olive oil and garlic).

Right now I have a pork shoulder in the slow cooker. It's covered in honey, paprika and a little cayenne pepper.

Yesterday I ran the Color Run 5K and got some delicious biscuits (a freshly made cheddar chive biscuit!!!) and gravy with pickled jalapenos. And the sun is out! Is happy times over in robot land :)


Today, I set up my gas grill for the summer!

I'm grilling a local, grass-fed, organic New York strip steak. Once it's just barely medium rare, I'm going to slice it up and serve it as part of a steak salad with homemade Caesar dressing.

Caesar dressing:

1/3 cup extra-virgin olive oil
juice of 1 lemon
1 egg
3 cloves of garlic
1 anchovy filet
1/2 Tbsp Parmesan cheese
a good dash of Tabasco sauce
a good dollop of Dijon mustard

Combine all in a blender and puree until smooth.

(Yeah, there's a raw egg in there. I eat raw eggs all the time and have never gotten sick!)

Hey thread, it's been a while. Still plodding along trying to ramp up my mileage for my half marathon. This morning brings us apples and cheeses. One of them an extra sharp cheddar, which has been living in the fridge with a smoked gouda. I approve of the results of this cross cheese experiment.


I used to run when I was in my 20s. I got out of the habit of regular work-outs after I broke my ankle, and only started running again about a month ago-- almost a 20-year hiatus! I've been following the RunningMate 5k101 podcast to get back in shape. (My doc says I need to get my blood pressure down significantly.)I'm up to running 8 minutes at a stretch, three sets, with a 2-minute brisk walk between sets. That's preceeded and followed by a 5-minute brisk walk.

One of my favorite breakfasts is my own invention: the apple-cheese tostada: Oven to 450F. Put a whole wheat tortilla on a cookie sheet. Peel and slice an apple and arrange the slices on the tortilla. Sprinkle with grated cheddar cheese, then dust with a pinch of cinnamon. Bake for about 5 minutes, or until the cheese starts bubbling.


Haladir, I'm going to email that one to my Dad. He's a huge fan of tortillas, apples and cheddar. He's also doing most of the cooking these days, since my Mom bashed her knee up.


Two eggs on top of two slices of toast, smothered in pulled pork with a strange soy sauce/paprika/honey sauce that I'm really digging right now.

This morning I had a very frilly pink donut. It made me feel ~*fancy*~. Totally going to be fuel for 4 mile run this evening, right? >_>

I had a Boston cream donut this morning. There was nothing fancy about it. But it was delicious.


My breakfast this morning was also nothing fancy: a sliced banana coverd with about a half-cup of organic lowfat plain yogurt, sprinked with about a tablespoon of Grape-Nuts.

And now I'm craving a donut...


Just had a bowl of fresh cherries, a sliced plum, and a too-big chunk of lemon poppyseed cake... amazingly delicious.

My girlfriend is crazy about watermelon too. So today I'm on a mission to the suburbs to get some.

Also, we both love chease. Unfortunately I just resent got alérgic to lactose. Apparently that can happen as you grow old.

Good news is that there are milk, cream and butter without lactose. :)
Bad news no ice cream or chease without lactose. At least not any products worth buying :(


Are we just talking lactose intolerance (which can be managed with pretty cheap medicine) or full on allergy?


Have no idea.
Doctors in Sweden don't want to test you for it. I can eat stuff with lactose but it gives me serious stomach problems.

Sounds just like intolerance then, that's what I have. LactAid or an off-brand knockoff taken just before you eat it severely reduces or even removes the reaction. =)

Have you tried goat products? Because they make an iced cream with goat milk.

Also to goat cheese products too, not just feta. They have some harder cheeses like parmesan and the like made from goat.

Made a batch of dirty rice for my lunches this week. Replaced the usual meat with ground chorizo and diced hardwood-smoked bacon. Good stuff.

D'oh. I've missed you thread. Half-marathon training in full swing (up to a 6 mile run), but food's been pretty boring. I went to Whole Foods and this container is mostly bacon. That's OK right? >_>


Last weekend was cheeseburgers. Since these were British cheeseburgers, the recipe involved boiling them for three hours in a mixture of sand, diesel and Winston Churchill's tears, forcing them through a dozen consecutive pigeons and then nailing the remains to the Prime Minister. Suitable fuel for two and a half hours of sabre drill, but must do something a bit more creative this Sat/Sun.


Wienerschnitzels with chips and a healthy dollop of ketchup rounded off by a raw homegrown tomato. All washed down with passion fruit juice.

Going to grill pork chops marinade in a garlic hoisin sauce this evening.
Probably pair it with a rice and some salad; boston bibb with shallots and a

French vinegrette:

Olive oil
tarragon,
white wine vinegar
basalmic vinegar
salt
djion mustard
whisk till properly emulsified.

Wash it down with a Rum and tonic 2 limes squeezes.

Last week was a junkfood binge and my fiance wants something healthy so this Friday will be Basa filets baked with garlic butter on sweet potato/carrott mash + assorted steamed vegies.

Then Saturday will be a game day with more lollies and chocolate :-)


Just finished off rest of yesterday's (pescetarian) caesar pasta salad. Now off to brown some chicken and crockpot it for dinner with a honey mustard-ry marinade, need to figure out some flavor/seasoning of rice to go with.


Fired up the grill tonight, and two NY strip steaks are happily sizzling. I have a salad and homemade Caesar dressing ready to go when the steaks are done.

I've had to give up running. I started getting severe pain in my left knee last month. My doctor thinks it's frayed cartilage, and the best thing would be to stop doing impact exercise for the next few months. Anyone have suggestions for low-impact, knee-friendly exercise that doesn't require expensive equipment or a gym membership? I've gained five pounds since I stopped!

Aging sucks. But it's better than the only alternative.

Stuffs pretty rough in robot land. Super busy and long days, but really awesome shinies getting worked on :)

I got myself some coffee and am running 2 miles after I hit my wall for the day.

8 miles on Saturday morning! *gulp*

Haladir: you may want to try swimming or cycling perhaps? I also do yoga when my knees are sore, and it helps a bit. It really depends on the knee injury, though.


I'd recommend swimming/water exercises too, Haladir, but I guess it depends on your knee injury and the availability of a pool.

Yesterday's honey-mustard chicken turned out ok, but not as yummy as I'd hoped; next time, it'll be soy-ginger-garlic marinade. Today: 2 cups coffee for breakfast, poached eggs & 1/2 english muffin for lunch, and probably Mom's salisbury steak & mashed taters for dinner (with the 'rents).


Lakes can be an option for swimming too. Particularly if you prefer the outdoors. There's only a few things comparable to sunrise swim on a perfectly calm lake.

Right now I'm taking a break from chopping spinach, making a Moroccan spinach salad for gaming tonight.

Someone else is making fried chicken and I like the idea of southern style collard greens, but I've never actually liked them that much. Hoping this serves as replacement.
