So in the end I went with cubing the chicken, sauteeing in oil and butter with mild herbs, then tossing that, bow tie noodles, canned cream soup, pasta water, frozen veg, sour cream and parm cheese into a dish and baking it all together as a cassarole. I topped with fried onions mixed with potato chips and more parm. I thought it was going to be too heavy or bland but it was good enought that even the girls finished and the wife and I had seconds.
Tonight: hibachi at a local place. My wife got a Groupon so we're going out and bringing the girls with us for a family date night. We've been here before so the kids will like the hibachi and my wife and I LOVE the sushi. For a place in suburban MN it has great, fresh sushi as good or better than stuff we've had in Minneapolis.
Oh man I've been looking forward to this all week! I even ate light today: so far I've had a bran muffin, some breakfast sausage and an apple. Think elastic waist pants are tacky to wear out to dinner?
I made some chicken curry soup the other day. It has been my primary food group since having been made.

I baked a big salmon filet and have a bunch left over. Not sure 'salmon salad' is a good way to go. But what else do you do with the leftovers?
Mix 'em with some rotini, some chopped veggies of your choice, and a lemon juice/olive oil/herbs vinaigrette, then let chill overnight. Before serving, grate on a little parm or crumb on some feta/goat cheese.
Yeah, I was gonna say casserole.
I've never had good luck with re-cooking salmon. I'd say go for the salad, and add a good amount of dill plus extra pepper to the vinaigrette. Alternatively, Penzey's sells a smoked Spanish paprika to which Crazy has become addicted. It works miraculously well with salmon, although it is a bit fussy about heat, so it's best to sprinkle it on just before serving. A little bit goes a long way, too.

It was finally kinda warm here in Madison today, so the food carts were out on the Library Mall. Unfortunately I had like 25 pages to read in Tale of Genji before class so I didn't get a lunch.
There's this one food cart, Umami Buns, that I've been hankering for. They have really awesome Japanese steam buns, and my favorite is spicy bulgogi. Holy crap good. 3 buns + wanton chips for $10!
Wednesday can't come soon enough.

It is finally warm and sunshiny in the TCs. Soon there will be farmer's markets and spring gardens. Soon there will be FRESH asparagus. Soon...
Until then store-bought asparagus in olive oil with pepper, parm cheese, and bacon.

Made my own chicken strips yesterday, pan-frying them after double-breading, once with flour, once with roasted garlic panko crumbs. They were so easy and much more delicious than anything from fast food places! I've pan-fried chicken before but it sometimes doesn't cook through before browning properly. The strips were thinner than whole breast filets and cooked better.

That and do the thing you do on the airplane where you hold your nose and blow. had 3 expensive trips to the ear doctor before they showed me that, cut my visits in half afterwards.
Last time I did that, BMW, I got an ear infection and pinkeye.

Yeah, it actually makes the problem a lot worse. I've gotten into the habit of doing the saline rinses, plus, the doctor gives me stuff to put in them which treats the congestion and swelling. I still get the occasional sinus infection, though. Wonton soup is a wonderful way to soothe the soreness and get my nose unplugged.

Okay, maybe with noodles or penne pasta, dill, and pepper in a light sauce of some kind. Or actually, with that paprika that Crazy is crazy about. That takes care of tomorrow. Saturday is every man for himself, and Sunday will be the ginormous pan of lasagne. That works.

My wife and I made bahn mi sandwiches for dinner. They were amazing, even with their lack of waffles.
Just got back from playing in the "Skull & Shackles" game. I drank too much rum. And there were no waffles.
We had pancakes with strawberries on top this morning. Looking at campsites for this summer this afternoon. I found one with tide pools with starfish in. Very excite.
