Ive seen some posts on here about undead lasting only 1 scenario. Why is that? If I cast the spell in our first game and my undead doesnt die during any of the encounters why do I then have to cast the spell again? I got a buddy looking to run a campaign starting at 11th lvl. I was gonna make a lvl 5 necro wizard/ lvl 5 cleric/ lvl 1 Mystic Theurge. And on a side note what's with spell synthesis not increasing as your Mystic Theurge lvl increases?

Sounds like you are a bit confused:
Pathfinder Society Organized Play (PFS) has a rule that basically says no spell effects (except for a handful of exceptions) carry over from one scenario to the next. This only applies to PFS games, not to a home games using the Pathfinder rules.
Since PFS pretty much ends at 12th level, it sounds like your Buddy's campaign will not be using the 'Organized Play' rules.

Spell Synthesis is an ability you only gain when you reach your 10th level of Mystic Theurge. Because this is the final level of Mystic Theurge, it simply cannot improve past this point.

I would strongly recommend beginning play as a Wizard 3 / Cleric 3 / Mystic Theurge 5. This will give you more spell slots, access to more powerful spells, and your caster level will be higher (meaning all your spells will be more potent).
