I've already got a basic plot, involving members of the Long Patrol showing up, battered and bloody with the news that Salamandastron has fallen.
Anyway, the setting will be VERY low magic, the only magicish classes I'd be allowing would be Monks, Alchimests and Oracles (slightly modified, I'll need advice on that)
Anyway, any advice on how to run this?
(Woodlanders, classes, ect...)

What Fayth said. It is probably your best bet to make it feel like Redwall. If you want even less magic, consider only letting in archetypes with no magic options. If you feel like your players need more options with all this considered have them peek at the SRD; I know that some company was a dozen or so classes for low magic campaigns that would fit straight up with Redwall.

Just off the top of my head:
I get a definite paladin vibe from Martin the Warrior and Mathias. I would make it so paladins A. Have to be an archtype that loses spells B. Dont have a patron deity (for obvious reasons) C. Loosen up the code. There would probably only be one or two in the whole world, and they would have to be connected to the abbey somehow.
The hares are pretty clearly rangers for the most part, with some rogues and fighters mixed in. Basil Stag Hare is possibly all three. Brawler makes sense for the hares with more eccentric fighting styles.
The badger lords have definite barbarian tendencies. Fighter works for them too, of course.
Otters would be mostly rangers too, imo.
I would peg Cluny as a ratfolk daring champion cavalier (order of the cockatrice) that fights with his tail attachment.
EDIT: Asmodeus would possibly be some kind of naga. Awakened dire snake with mesmerist levels if you want to make him more unique.
Tsarmina as a catfolk is obvious, but I'm not sure about which class.
