The animals should be easy. Cougars, pronghorn antelope, american bison, eagles, hawks, brown and black bears, wolves, deer, elk, moose... just pick up a field guide.
Monsters would be those that like the mountains. Mountain dwelling dragons, trolls, ogres, wendigos, earth elementals, giants, hippogriffs, kobolds, etc... But remember, half of the state is part of the great plains, so you could have any monsters who roam open spaces, like bullettes, the tarrasque, plains-loving dragons, giant snakes, etc.
Colorado is an arid climate so probably no swamp critters, but you could easily introduce things like poisonous desert dwelling creatures. Depending on the technology level I'd probably have some nomadic humanoid tribes roaming around too.

Being a native of the Red State and lived her all my life here is what we would have
Hill Giants
Storm Giants
Frost Giants
Trolls
Ogres
Owlbears
Dark Dwarves
Elves
Orcs
Goblins
Most dragons as we do even have deserts and swamps just not large marshes)
Hobgoblins
Kobolds
Ents
Bugbears
Worgs (We do have some wolves that live near Gould)
How is that for a starting list

C Springs ONLY all others moved to Idaho. Colorado is actually a very diverse accepting state.
Every state has them, and we do not have as many as some might think
She's right. They're centered mostly in Idaho. Which sucks but what can ya do?
As for beasties I'd try to use stuff from local mythology and folk lore. Just importing a bunch of European monsters doesn't seem very satisfying to me. There should be some books on local folklore at your local library.

I'm going to say, Colorado Springs.
Captain Howdy (Strangeland reference) Seriously you need a tattooed sadomasochist as an NPC in the region.
Really a Colorado Springs like area would have two encounter tables. Mountains for sure, but to the East lies the high plains. Between the two quite a few creatures roam between them.
MOUNTAINS
hill giants, stone giants, trolls, ogres, dwarves, dragons, drakes, wyvern, black bear, cougar, bighorn sheep, eagles
HIGH PLAINS
bison, pronghorns, wolves, some sort of monstrous humanoid

If we're talking Colorado Springs - you need a lot of high level clerics and armies of followers.
(Fire elementals - lol.)
Or false clerics (use rules for Razmiran Clerics) or maybe just a Zombie plague.
Don't forget Broncos.
Earth and Air Elementals, Jackalope, Buffalo Chickens, Ghosts and haunts (from old mining camps to places like Mesa Verde, I've seen them), Chupracabras coming up from New Mexico into the San Luis Valley, giant pine beetles, and a recent invasions of fire elementals burning forests.
Were-coyotes, because they are shape changers and can be found in cities, mountains and plains. Also Kitsume for the same reason. They practically have taken over metro Denver. Also common in Denver are light rail golems.

Jackalopes and Beer(Bears with antlers) hang out near the Lost Dutchman Mine. It sounds to me like that mine is full of uranium. Everyone who handles the so called silver gets sick and dies. Except for 12 toed mutants. Watch out for psudo zombies. The hills have eyes. :)
Anyone from the area knows that Jackalopes ONLY live in Wyoming :P

Okay, if I write an adventure set in a creatively anachronistic Colorado I get the following suggestions:
Note: the adventure I'm currently writing has these as the main antagonists.

What, too soon?
The recent wildfires...
I would suggest all manner of goblinoid and orcish populations. A colony of storm giants on Pikes Peak. And further west would be a clan of frost giants with a few white dragons as pets/ guards/ etc.

So that's where the mine is. Put on your radiation suit before going after it. :)

I lived in Southern Colorado for a few years so get over yourself AD.
Perhaps you do not know the difference between qualitative and quantitative data, AD. Maybe you can go read about them instead of telling others what to do?

I was talking about the uranium mine.
Don't turn your back on any Jackalopes."Right in the butt!"
If you toss out some salt licks and carrots you should get some decent footage.
