If I'm reading the rules right, then crafting checks would generally be done as taking 10 (unless a higher number was needed and the player was gambling on it).
Can you take 10 on the checks to craft magic items? If so, it seems like it would basically happen by default so why is there even a rule for accidentally making cursed items with a bad skill check?

Yep. This would be the world of Golarion has so many magic items without there being cursed items EVERYWHERE.
If so, it seems like it would basically happen by default so why is there even a rule for accidentally making cursed items with a bad skill check?
Cursed items are what happens when Tony Stark is in a cave being forced to work at gunpoint, but doesn't have Protagonist Immunity against failure.

Because someone (likely with a poor number of ranks) is also trying to ignore pre-reqs and speed construction... just the right recipe for disaster.

Also, if pressed for time, sometimes you have to roll and hope that you can finish Crafting early.
This is a house rule, but in my game Taking 10 takes double the normal amount of time to accomplish something. Paizo has specified that Taking 20 takes 20x as long, but they have yet to mention anything about taking 10 using up more time than a normal skill check. If you're "being careful", it's going to take more time than doing something "under pressure".
That's why I say taking 10 should take double the normal amount of time as a regular check, but like I said it's just a house rule... but it does fix this conundrum with Crafting. I think Paizo MEANT for crafting to require checks, but I don't think they had the "taking 10" rule in mind when writing the Crafting rules...
So with my house rule, the player can either role normally as per the Craft rules, or take 2 weeks to make something.

Taking 20 takes longer because it's literally 20 checks. Taking 10 is one check, hence no change in time. Also, it's not "being careful", it's putting in average effort without a distraction.
