Had a BLT yesterday with Applewood smoked bacon, green leaf lettuce, a thick slice of an heirloom tomato and some pesto mayo on Texas Toast. Mmmmmm good.

I another BLT for breakfast this morning. Nothing bets a BLT whilst watching the Olympics.

You start cooking two slices of bacon, when they're about 1/2 to 2/3 done, you pour pancake batter on top of them, then cook the pancake like normal.
The pancake fries a little bit in the bacon grease and the combination of fatty, salty and sugar (the syrup) is just heavenly. I much prefer this method to pre-cooking the bacon and crumbling it into the batter, it just doesn't get the same taste.
I do the same thing with my fried egg sammich. Carmelize the onions with the bacon,when ~1/2 done, crack a couple of eggs (Over easy/med)over it all. Fold into a sammich with mayo and spinach and thick tomato. [/drool]
At first, my daughters went eww. But now I have to make at least two sammiches if I even want a bite. BEST (Bacon, Egg, Spinach, Tomato) Sandwich.

Last Sunday at brunch in a local restaurant, I ordered a side of bacon.
They mistakenly brought me TWO sides of bacon.
I took it as a sign from God that I need more bacon in my life.
