Well we were expecting a twist and boy this is a good one! Monster must be 600 words, CR 7, and cannot be a construct, dragon, ooze, or outsider!
This definitely falls right in the sweet spot for adventuring so its a monster that can terrify low levels or gang up on higher levels. For my money the best CR 7 monster that fits the criteria above is a toss up between the Drider and the Medusa!
So what are the community's favorite CR 7 monsters?

My top three would have to be the aboleth, black pudding, and the remorhaz.
I'm a big fan of bulettes, nymphs, and remorhazes (remorhae? remorhazii?).
Two of my favorite categories are not eligible: constructs and oozes
Chuuls are probably my favorites, although shadow demons and the Hounds of Tindalos are also great.
I statted up my monster ahead of time in case I got into RPG Superstar, and by an astonishing coincidence, it was CR 7. Not Golarion-specific, though.
3 of my 5 ideas were prohibited monster types. Thanks for narrowing it down for me.

My favorites would be the greater barghest, remorhaz, and spectre.
None of my 3 favorite CR7 monsters are a construct, dragon, ooze, or outsider: aboleth, chimera, & spectre.
I like the water naga, hound of Tindalos, and dire bear.

My CR 7 favorites all come with particularly fun and/or silly gaming memories attached:
Aboleth; for an extremely stupid rainy day run-through of I1 back in the 80's. For some reason me and my friends got the intent of the aboleth completely wrong and it wound up being played for comedy. Now, don't get me wrong; as I matured the concept has certainly grown on me and I love them now for the manipulative, cunning, horrors of the deep that they're supposed to be, but nevertheless, whenever an aboleth is supposed to speak/thought project in a game, I hear it doing so in a voice reminiscent of Eeyore.
Soul Devourer; From a similar point in time, albeit much less silly, I recall running Master of the Desert Nomads and one of these things was one of the first encounters. And since it was a new monster for that adventure, nobody knew how to handle it and it kicked the ass of half the party before being killed. Very fond memories for the killer DM that I was back then. So, when these guys (who I didn't know even had the OGL status) showed up in PF, I pretty much squealed for joy.
Dullahan; Well, strictly speaking I've never encountered one of these guys at a table, but one very memorable Ravenloft game I played involved the DM's homebrewed headless horseman type monster as the big bad, and these guys are definitely the closest spiritual successor there is.
And, of course, honorable mention goes to the poor ignored animal right in the middle of the CR. No, nobody gives you the attention that aberrations, undead, magical beasts, outsiders etc. get, but I still love you, Elephant.
I've always been a fan of Hill Giants, Invisible Stalkers and Medusa. Monsters like the ramorhaz and black pudding are ok, but creatures that destroy items are not "fun" monsters to fight. Especially in an Organized Play environment.

I love all "vanilla" monsters - so I'm really excited by the potential of this monster round - we might see the new "kobold" :P
I looked over the list from the first Bestiary, and came back with dire bear, hill giant, and spectre. Honorable mention to the stegosaurus. As is, I wouldn't call any of those Superstar, but sometimes, a classic is what it takes. As fun it would be to see a dire monitor, say, it would have to be a really cool dire monitor to be Superstar.

From a bang-per-buck point of view, I like the good old Dire Bear.
The Drider and Nymph are also cool and you can easily build plots around them both of them. (Unlike the Dire Bear which is just brawler).
I love the bulette, remorhaz, and the aboleth. Off-limits, but I still love succubi. The drider is pretty good too, but see limited use in my games because of their association with drow
I am partial to dragons, but since CR7 is too small for a blue...
Elementals would be my next favorite(s), but drider, nymph and bullettes all stand on their own in the cool department.
Aboliths sound like ey-ore in my mind too. :)
When I think aboleth, I think of the Spacer Guild pilot from Dune. The big thing floating in the tank of spice.
