I am trying to explain the thematic differences between the base classes and am having trouble with a few:
1. Magus and Monk
2. Fighter and Cavalier
3. Druid and Witch
4. Rogue and Gunslinger
5. Wizard and Summoner
Each later choice seems like a gimic version of the former choice... Could someone help straighten me out? :)

Magus uses arcane magic and can eventually wear heavy armor, monks do not wear armor and cannot cast,they are very mobile and resilient to magic. Monks must be lawful also.
Fighter is a highly trained warrior who is a master of all martial combat, Cavalier is based around a mount teamwork feats and a specific order which guides him morally and ethically whether it be himself or a noble whom he has pledged his allegiance.
Druid is very in tune with nature and balance (must be neutral) they cannot wear metal armor and can take the form of beasts of the wild for hours on end. Witches are guided by a small familiar and cast divine and arcane spells. They are guided by a mysterious themed power (see patrons).
Rogue is your typical sneaky opportunist exploiting and enemy's weaknesses when he cannot properly react, they are masters of all skills whether it be picking locks doing backflips or climbing walls and their reflexes are nigh unparalleled. Gunslingers are masters of emerging technology and leave their mark on the world through great deeds known as grit, their courage is not easily broken.
Wizard is your iconic pointy hatted caster guy who studies to master arcane arts through intelligence and study, they prepare spells ahead of time from a personalized spell book and can adapt to nearly any situation. Summoners share the most powerful bond of all classes with a creature known as an eidolon and can even shape it to their very will. They master magic through personality rather than intelligence. Summoners memorize spells rather than study them.

1) Magus casts spells and monk uses kung fu.
2) Fighter is your general sword swinger and cavalier is focused on using a mount.
3) Druid is basicly a nature cleric that can turn into animals and the witch is a witch.
4) Gunslinger shoots guns and does cool manly feats. Rogue sneaks around and stabs you when you are not looking.
5) Summoner is a guy who likes to call friends to help him fight. He has one extra special friend. Wizard is the classic "I have a spell for that" wizard. He can know all the spells but can only choose a few per day to cast.

1: Magus focuses on increasing his abilities with his weapon and incorporating his spellcasting into melee combat [barring archetypes], whereas Monk focuses on improving his physical abilities without the need for weapons [again, barring archetypes]. Monks do not cast spells, but instead gain ki abilities that often mimic spell effects, but are not spells.
2: The Fighter is a generalized combatant; versatile and customizable based on your feat choices and playstyle. The Cavalier is a specialized combatant focused on incorporating his mount and teamwork abilities into gameplay.
3: The Druid is a Divine spellcaster that draws power from nature and nature deities. He can choose to focus on his spellcasting abilities, or to embrace the more physical side of his abilities and use his faithful animal companion in combat. The Witch, however, is an Arcane spellcaster who uses their familiar [which is often not a combatant] to access their spells, and as something of a go-between with their enigmatic Patron.
4: The Rogue is a generalized skill-based character, often called on to deal with stealth issues. Much like the Fighter, however, the Rogue is supremely customizable based on feat and rogue talent choices. The Gunslinger is primarily a ranged combatant that focused on using burgeoning technology [guns] in combat. They have a pool of abilities, similar in scope to those of the Magus, that often augment their combat abilities.
5: The Wizard is *the* generalized Arcane spellcaster; they prepare spells [which they can theoretically have an infinite number to choose from], and often have a focus on one school of magic over others. Like the Fighter, they are also highly customizable based on feat selection and playstyle. The Summoner is an Arcane caster that focuses on their bond with one particular summoned creature [their Eidolon], which they use to solve the challenges put before them. Many of their abilities are focused on augmenting this Eidolon, although they do have a small selection of spells to choose from.

1 Magus - magic using combat character, the magus mixes arcane knowledge with martial prowess. Primary attributes are the ability to cast spells and attack at the same time (monks dont cast spells).
Monk - Martial arts master with an eastern feel. The monk is first and formost a character of physical prowess through mystical power. The monk uses this mystical power in the form of ki, which while also uses a point system is very different from the the magus' arcana points. The monks primary attributes are flurry of blows (a completely physical means of attacking) and this unarmored defensive bonuses (generally magus wear armor).
2. Fighter is the all around martial guy. He is the best at using weapons to do bad things to the enemy. He specializes in one or more weapons to increase his prowess with that and usually a chosen fighting style. While he can choose mounted combat as a stlye and excel at it, its always about the fighter, not the mount (which is expendable).
The cavalier is a class built around melding man and mount. The mount is essentially an indispensible and a big part of what the cavalier does. In addition while the fighter is a very generic character class, the cavlier is far more focused on creating the theme of mideval knights, with the various thematic orders the cavlier uses.
3. Witches gain arcane power from pacts made with patrons via familiars. They use hexes to augment their impressive variety of arcane magic (which does take some cues from the divine list).
Druids are agents of nature. They are divine casters that draw their power from nature herself, and are its protector. They morph into animal form and often have a powerful companion (where as a witches familiar is far closer to a walking spellbook then a combatant). The druid spell list has a strong natural theme and is designed to help the druid and companion take the fight to natures enemies.
4. Rogue is the sneaky theif. He sneaks up behind you, picks your pocket, stabs you in the back and then loots the rest of your corps. Skills are a primary focus of the Rogue. They are the original 'skill monkey' and are expected to make the most out of non-combat situations
The gunslinger is a western stlye ranged combatant. He first and foremost uses guns. There is little emphasis on skills for the gunslinger, most of what he does is at the end of his barrel(s).
5. Wizard is the all around arcane talent. He doesnt just use magic he KNOWS magic. He knows the ins and outs, he knows how to make best use of it, and he PLANS for it. As a prepared spell caster with a (usually) big selection of spells to choose from, the wizard is all about planning and intelligent use of magic to meet his goals.
The Summoner is a magic user that first and foremost has made contact with and makes use of a powerful extra planar being. Much of what the summoner does is all about the eidolon he summons. Sure the wizard can summon monsters, but the summoner perfects it, particularly with the eidolon. He also has a highly restricted spell list that is more or less designed to be an eidolon aid list. The summon monsters spell like abilities are also important but everything for the summoner takes a back seat to the eidolon.
