This is potentially a dumb question, but I'll ask anyway.

If you get hit by an AOO while using a Spell-Like ability, do you need to make a concentration check?

If so, what stat would you use on the concentration check if you were a non-caster class? (for example, if you were a rogue who had obtained a spell-like ability somehow).

It is possible to make a concentration check to use a spell-like ability defensively and avoid provoking an attack of opportunity, just as when casting a spell. A spell-like ability can be disrupted just as a spell can be. Spell-like abilities cannot be used to counterspell, nor can they be counterspelled.

So yes, it does make a concentration check just like normal.

Further it says:
If no caster level is specified, the caster level is equal to the creature’s Hit Dice.

For rogue's minor/major magic talent however the caster level is specified as their rogue level.
