My Paladin will soon be traveling an Alchemist who's specializing in Poison Use. (His brother in game.) How is the use of poison seen in game? Is it evil and/or dishonest?

While the use itself is not always evil, it is not a good act nor is it honorable. It really comes down to the kind of poisons and how they are used. And the locale laws on such.

There's no reason for you to grief the alchemist player for using poison if that's his character concept.

As a Paladin, declining the use of the substance for combat purposes (and even giving some fun little banter about preferring to make sure things die quickly) would make sense. Actively trying to prevent the other player for playing out their concept because of an alingment restriciton probably falls under the terms of griefing.

You should however talk to your GM on how he views paladin alignment and sins of omission. (A sin of omission occurs when an interested party lets, but not encourages or pursues, a course of action that they consider wrong to occur.)
