I'm bracing myself for disappointment but am really hoping this takes off. If it did, I'd be a fan of three sets a year (I'd prefer more, in fact but doubt there's enough demand) - one AP, one general bestiary/iconics and one themed to suit the various modules Paizo had put out in the preceding twelve months.
I'm less keen for the 'skeletons/orcs/gnolls/drow' or whatever as there seem to be a huge number of still available options along those lines. (Golarion's goblins merit a special exemption from this, imo). I think addressing the Golarion/Pathfinder specific minis first would be my preference.

Proteans. More Proteans. Even more Proteans.
A decent Marilith (I can live with non-nude, but not with fugly!). An erinyes. Most demons, daemons, devils, and other outsiders, really.
Pugwampis! Lots and lots of Pugwampis. Make them one of the scenario pack monsters - A bunch of pugwampis, maybe with other gremlins, or just iconics who just fell victim to bad luck. Call the pack "I want to see my players cry like hysteric little girls." :D
One thing I keep suggesting is the character progression miniature. Several minis depicting the same character, but on different levels and with different equipment. Alternately, this could be a matched set of warrior types - either generic or for a specific Inner Sea Nation. Like Korvosan watchman. Korvosan sergeant of the watch. Korvosan watch captain. Korvosan watch priest of Abadar. Korvosan watch wizard. Sable Company Marine.
And consider "revisited" theme packs. The Classic Horrors Revisited would have one of each monster revisited in that book.
Fairies, fairies, fairies. We need satyrs, pixies, dryads, nymphs, redcaps, nereids, and so on.
And generally everything else Pathfinder gave a unique look.

One thing that would totally rock is a mounted/unmounted combo.
So you have Alain the cavalier on his warhorse. And then you have Alain on foot, and a warhorse miniature.
Maybe not something to put into the random packs, but there are supposed to be some scenario packs. Combine him with a likely cohort and some lance fodder and you have a scenario. Plus, I'm sure a lot of people would love to have both a mounted and unmounted version of the same character to represent their mounted characters.

For mounted characters, I tend to think it works better if you make the mount a little off center and leave space for the "rider"'s mini to sit on the same base.
As for what I'd like to see. Owlbears that are at least uncommon. I'd like to be able to pick up an owlbear mini on the secondary market at a reasonable price.
Non-standard races and sexes for the various class (or at least class groups), e.g. female half-orc mage, female halfling fighter.

Sinspawns as a common.
A rare Sandpoint Devil.
Uncommon or Rare Goblin Rangers on Goblin Dogs.
Common Goblin Dogs.
Common or Uncommon Giant Geckos.
And that is just off the top of my head from the first book in RotR. The possibilities are virtually endless. I for one am looking forward to years worth of these things.

Dragons of every conceivable variety and size category, but I think that's a given as something most of us want.
I'll add my voice to the desire for more proteans and packs for summoned creatures.
A gelatinous cube that isn't rare. In DDM it was rare, and pretty high-priced on the secondary market because of the "classic monster+rarity" combo it had, and it had to have been the simplest sculpt of all the minis they did.
More elementals of all sizes, but especially large and huge ones, and earth and air elementals, which were under-represented in DDM.
Giants that don't look cartoonish or like bad caricatures, and more than one sculpt of a particular type of giant to make for more visually interesting encounters that involve multiple giants.
If you decide to include minis of inanimate things, siege weaponry would be nice to have, along with simple vehicles like wagons/carriages and small boats.

So here's a list of minis I very much want to see made. These are personal preferences and I know that size will be an issue for at least one. Those with a '!' are the ones I'd really want made.
Aboleth, assassin vine, basilisk, beblilith, behir!, bulette!, chuul, balor, glabrezu, hezrou!, nalfeshnee, vrock, pit fiend, dinosaurs, dragon turtle, ettercap, ettin, hydra, linnorms, minotaur, owlbear!, pseudodragons, purple worm!, rust monster, shambling mound, tarrasque, treant, worg, wyvern.

Wolves please! There is a dearth of wolf minis in the old D&D minis sets, and this has been very frustrating for me. Wolves are a common opponent low-level characters face in forest settings, particularly as an "along the way. . ." type encounter.
They are also popular choices for Druid and Ranger Animal Companions and summoned monsters. Plus, you could use them for the wolf form of a werewolf. And they would be a pretty decent substitute for a dog, which PCs can buy and are which also used as low-level guards in many adventures.
Note that I'm not talking about dire wolves, worgs, or barghests here; there have been plenty of those in previous mini sets. But plain old normal wolves have been very hard to find!
Ideally, the wolf mini would be a common, since they are often found in packs. I could see an uncommon or rare wolf with a nicer sculpt, but to me that would be less important than a "normal" wolf as a common.

Grigori - I know a lot of people who would love to deal with him. He also works great for a random commoner.
The Stag Lord - Unique look for a villian, and he is hard to replicate.

I agree with wolves. A handful of medium and a few large would be great.
Commoners: not too many, but enough that I can easily do civilians in the game.

Fae - we could use lots of different fae, and you can always make a new, unique look on them.

I definitely agree about more civilians/commoners/NPC classes, and I agree that merely one or two per set would be sufficient. I'd like to see some commoners--Farmers, Lumberjacks, fishermen, basically the type of people you'd expect to see being oppressed in Darkmoon Vale, Ship Hands who are NOT Pirates or Rogues, Experts of various types--Sages, Barristers, Librarians, traveling merchants, shopkeepers, etc. I'd like to see aristocrats, nobles, etc.--both men *and* women. DDM had a male farmer, but never a lady farmer. :-(
I *really* want to see some barmaids. Much as meeting in a tavern is a cliche, the ubiquitous barmaid is a fixture in more campaigns than I can count. Thinking back on Burnt Offerings, without any spoilers, I remember trying to put together a crowd of civilians (for the opening scene) by using minis, and they were mostly represented by some heavily armed and armored "Bystanders." Just a pet peeve, but I'd like to see enough regular folks to fill in for such scenarios.
Let's see...maybe some, um..."Ladies of the evening...ladies of ill repute"? Beggars, Barkeeps, kids playing in the street, drunken nobleman with a bulging coin purse.
Definitely some Faeries: Faeries, Nixies, Pixies, Dryads, Piskies, grigs, etc.

I'd like to add my support for an Owlbear. I think I actually managed to get one from DDM, but it's still a cool creature.
Constructs! Bestiary 1 has the basics (Stone Golem, Iron Golem), Bestiary 2 has Adamantine Golem, Mithral Golem, Clockwork Golems, oh and a creepy soulbound doll all have awesome art straight from the bestiaries (well... I'm not as much of a fan of the Stone Golem and some of the other Golem art from Bestiary 1). They are admittedly mostly large, but I know I'd LOVE an Adamantine Golem as a premium mini. That things looks so cool.
In more utility related minis (though Stone Golems are common enough), the creatures from Summon Monster/Natures ally as I've seen others suggest in other threads, and really just any animals as stable monsters.
and if you guys ever do a colossal mini it's gotta be the pathfinder Tarrasque :p

Around set 3 or 4 would love to see a Planar set that focuses on outsiders. Especially the different planar races. With a break down along the line of CR 1-6 Common, CR 7-12 Uncommon, CR 13-17 Rare, and if you're going to do ultra rare than CR 18 and up Ultra Rare.
Also, and I know it's a lot to hope for an Aquatic set would make me cry tears of joy!!
Aquatic monsters and races always get the shaft but at the same time so few of these have been done that you would probably be surprised just how well an Aquatic themed set would do.
And on the pluse side if the whole set was Aquatic themed than maybe the sculpts wont fall into the trap of having a wave or splash supporting every creature. If a creature doesn't have proper legs a black stand is all you need. We know the monsters are aquatic a wave or splash to drive the point home is often a bit much.

Wow. Of the creatures you listed (including the "regular world" ones), I'm not familiar with 90% of them. So I'm not sure how wide the appeal would be. Maybe these are like some of the WotC minis where I'd open the box and say, "What the heck is this? When will I ever use this...thing?" But I guess posts like this show that there must be some type of demand for...obscure monsters.
I'd rather they stick with the ones from the first beastiary for a while, and any other classic monsters from the world's most famous roleplaying game. I'd like to see a solid representation of the standard PC races in every profession, in both genders, before they branch out into...elemental? races?
But, to each his own! :-)

Well, people that already have scads of standards like orcs and kobolds may want more obscure creatures. But to be fair, at least half of that list was demons/daemons. Even if you don't recognize the names, I think most gamers would have use for demons. They are a classic type of villain. The biggest problem is too many of them are large/huge, so the numbers that can be produced are going to be limited. Especially when you also need to represent ogres, trolls, minotaurs, etc.
I do think that anything in a hardcover Bestiary should be fair game though. I'm certain Paizo will have a fair balance between classics and newer critters. But one of the things that makes Pathfinder minis stand out from other companies will be the unique critters they invented like Proteans.

We'll do more lizardmen eventually, too. Right now the idea is to make minis of the coolest looking images we have of the representative creature, whether it's the Bestiary image or not. As I recall the Bestiary illustration is jumping in a sort of weird diagonal pose that wouldn't translate well to a sculptor, so we went with a nice-looking head-to-toe shot.
For the Rise of the Runelords set that's currently in pre-production, we were able to commission several new full-body shots with their eventual translation into miniatures in mind, which means we get a cool illustration for the hardcover reprint of the entire Adventure Path that's also appropriate as a model for a three-dimensional object.

See, I never liked the medium swarms, and have never once used them. On the other hand I've used the large rat and large spider swarm dozens of times

Okay, what's up with the Flumph? I keep reading requests for them as though they are an essential part of numerous campaigns. I had no idea what they were, so a quick Google search shows what they look like and suggested that they're really more of a joke than anything. In over two decades (nearly three now, yikes!)of playing D&D, I have never encountered a single Flumph. Apparently they go back to the original Fiend Folio (which I have, naturally) but...so what?
Are these repeated requests some type of inside joke that I'm not getting? Because, I have to be honest, there are plenty of quazi-obscure creatures I'd rather see first: Grell (or is it "Grells"?), Darkmantles, Intellect Devourer, Mimic, Gelatinous Cube (definitely), Black Pudding, Grey Ooze, Green Slime, Assassin Vine, Grab Grass, Killer Trees, Myconids, Caryatid Columns, Invisible Stalker (I really think this one should just be a black disc with the name on the botton--very cheap "sculpt"!), Rot Grubs, etc.
(If it is only a joke, then sorry for being obtuse).

There could be a couple reasons for wanting the flumph. I, too, have never seen it in a game. It was orriginally one of the most made fun of creatures in D&D. Some people have taken a love to it, but it was at one point voted the most worthless creature in d&d. So yes, not it is mostly a joke, but some people want to keep the bad with the good.

Its nice to have multiple models for different races, and of course, nice usable heroic models for PCs
Please consider putting in figures with different weapons types, polearms to kukri to a halfling with a sling staff.
