AC Master

I'm looking to see what the best options would be if I were planning to play a very defensive character. Ideally, it would be someone with great AC and not neccesarily amazing saves or great attacks. It's all about not getting hit.

What would be the best class to do so? I know monks and duelists tend to be good options for this, but I just don't know where to start.
