Have there been other easter eggs?
There have been a few. I don't see them as Easter Eggs as much as world continuity, though. It adds credibility to the setting to have interactions from people and stories all over the world. So far we've seen a few families that have had members in various cities. One of these had an NPC in the first adventure of each of the first three APs (a father and his two sons). There was also some foreshadowing in Eando Kline's Pathfinder's Journal in RotR that hinted at things to come in CotCT. I haven't read LoF in as much detail as the first two so there might be some in there as well, but I don't know what they are.
And no, I'm not going to quote the "spaceship" that has invaded this thread.

Jade Regent? Is this the crossing the Crown of the World AP hinted at? Is it AP 7 or 8? If it's 8, what's 7?
It was originally going to be AP#7 but due to the large number of major support books that it would require (like Asian-influenced classes, development of another large section of the world, etc) it was pushed back beyond next summer. Its replacement in the AP#7 slot has not yet been announced.

That's true, and there were/was one or two young blue dragons in the Fortress of Giants I think. But they weren't a great and singluar foe like the individual ones.
