I just take the amphibious template from the Advanced Bestiary and add it to humans. So far I haven't done anything with them, but there are rumours of them circulating so if I need them I'll pull that out. :)
Note that the gillmen of Azlant are different from the maridar. I'd love cultural stuff (or even a module) about either group. :D

The gillmen of Vialesk (the maridar) were intended to be water genasi, possibly descended from a stock of Azlanti humans who mixed gradually with marids, water elementals, water mephits, possibly even brine drakes in the mix over the centuries. Of course I initially called them water genasi without that name being open content, so it was replaced in the campaign setting by gillmen. Realizing my moment of "whoops" there, I called them maridar to make them a bit distinct from the Golarion based gillmen, though still hinting at a possible connection (if pretty remote).
I really regret not being able to use genasi for elemental planetouched.
