Whatever it is we do, I feel like we should use Mushroom Ring Disabled on the next encounter. I know the obvious use of that would be against the final encounter, but part of me wants to actually experience that encounter as intended.

Knockdown requires its own action to knock someone prone; it shouldn't be able to use it on an AoO (unless it's Improved Knockdown, which is a different thing entirely).

Attack of Opportunity (tail)(agile, reach 15 feet): 1d20 + 11 ⇒ (14) + 11 = 25
Damage bludgeoning plus Knockdown: 1d6 + 6 ⇒ (4) + 6 = 10

Doubtful, since 2e is all about keywords and Knockdown is a very specific keyword. Generally if it was something like an automatic-prone-on-a-hit it would be a different keyword (like a choker having something called Strangling Fingers and not Grab with a variation from the standard ability). Again, if it were IMPROVED Knockdown (which is a free action) then it would be a different conversation.
Assuming the GM wasn't flat-out using an incorrect keyword, bog-standard Knockdown couldn't work on an AoO. But if the creature has something that I'm not accounting for, then so be it, and I will concede that Celister is prone. I'm just making an argument based on the information that I have.

The argument is moot, really, as the GM has the final say.
But if everything is as you said, then RAW says the knockdown shouldn't have happened.

Yeap. Since you can play each tier once, you will have chance to face Qxal as a player even after playing the lower tiers.

They started the Tiered Special approach recently with the Starfinder Season 2 special. With kind of the same idea. The "big Bad" was only faced in the higher tiers [9-12], however the other tiers [1-4, 5-8] also has something special for its final encounters.
Making the special some what repeatable, in that you can play each tier band once, helps with the issue of giving cons that happen late spring/early summer a chance to still host the recent special and still get players that can play. This special has three tier bands, [1-2], [3-6], [7-8].
Although usually groups will muster to keep 3-4 and 5-6 on different tables, they are still the same band. So after this you can play a character in the 1-2 and 7-8 but not at 3-4 table since that is in the 3-6 tier band.
For your other question, you would have to play each band with a different character.

That is pretty sweet. I was worried at first that we still had the BBE fight (that we were going to fight Qxal on top of the redcaps), then a little puzzled when it became apparent we weren't going to fight Qxal at all (unless the redcaps were going to climb on top of each other and make Qxal, Voltron-style).
It's a great setup, I'm going to make an effort to play the 7-8 subtier someday.
