This is my first PBP combat so learning the ropes. I know GM rolled initiatives. I follow Canella. Do I wait until she takes her turn before I act? Or does everyone simultaneously do stuff and the GM sorts it out in initiative order?

This is block initiative. The initiative is grouped onto blocks. When the GM calls on a block anyone in that block may act in any order. It's generally assumed to resolve in post order. We do it this way so we're not always waiting on one person to make their actions. Some GMs even go so far as to always have PCs in one block.
Acceptable time to wait for someone to post varies from game to game but is usually about a day with the weekend counting at one day. GM will typically call out who needs to act if someone is taking too long in case there was confusion and if they take too long again the GM can bot the character for that turn to keep things moving.
Momentum is critical for a successful PbP
I write this knowing that I'm the one making some of my games wait on me.

You can flag down another roaming patrol to escort any criminals to the jail.
Loot tracker....hmmm...the AP says that the pcs receive their rewards by fining those apprehended. It is assumed that pcs will receive wbl by confiscating equipment and coin.
I am not doing that; except in rare cases (as this thief encounter). Instead, we will be receiving a weekly visit to the Commissary for equipment and coins to be requisitioned. These items are yours to keep (or sell at 1/2) as you please.
I will post those Commissary lists each in-game week. The coins/items you get from fining (as thief encounter) you may have (split) immediately.

Unfortunately, you may only Ready 1 Action actions. You may retcon; delay; or other please.

You are Trained in Unarmed (along with certain weapons). Everyone is now. You could also attempt a Religion check for more information as 1 Action.
That is why I put Telekinetic Projectile in that spellbook.

Do we understand the challenges the chicken creature is yelling? What language? I'm trying to learn whether it's acting in a hostile/destructive manner before attacking.

Our brave--and getting experienced--Agents do feel that the chicken is indeed hostile.
Knowledge Arcana or Nature DC 18 will get you more...but I was waiting for any posts just prior to calling Initiatives.
Any "Encounter" action will initiates...err...well...Initiative.

Actually, never been to GenCon. I have just been to local cons; PFS.
@Watanabe PF2 really made lower level Save or Suck spells a bit tricky. They are great once you can Heighten them to your highest level spell slots to keep pace with creature rating.
I apologize also. I think that I will give you Creature Ratings for that reason with successful knowledge checks.

Michigan. Gun season is November 15-30. My first time ever deer hunting. I haven’t seen a deer yet, so tomorrow morning is my last chance this year. Fun experience though, I think I’d do it again, even if I see nothing this year. :)

GM, when you switch us back to Exploration mode or ask for Exploration actions it suggests a longer time frame. Treat Wounds is an Exploration activity. Delete the Treat Wounds, but that was my thinking when I chose it. Sorry for causing confusion.
Eh I'd agree with you if all exploration mode activities were accomplished in increments of 10 minutes or longer. I'm not sure if that's true but I have a hard time believing that it is the case. It just signifies that we are out of combat. We can stay in exploration mode long enough to heal, but there are consequences to doing that. Which was the point of my IC post, and was confirmed OOC by GM.

I've mostly played at low levels, but the highly tuned math behind the second edition ruleset has made it feel a lot more like a barely-scraping-through-the-grind kind of game than a we're-badass-action-heroes sort of game.
