There were scientific experiments where they managed to let you experience to be in a different body and seeing your original body (don't know if they did it with complex mirror system or VR equipment.
Given the choice to see their original body hurt or the one they are in at the moment they didn't get the clear answer to hurt the original body. You are your body. The imagination that your spirit and soul could just move on to the next body is an illusion.
And that is also true for all who know you. Different body different person. Ask the children of Caitlin Jenner.

Bear in mind though that we are talking about a world with magical reincarnation and returning the dead to life in different bodies. Magic that can change appearance at a moments notice and people who can turn into animals. I believe in a world like that, the physical body is much less important than the soul

It's no machine where you throw in a coin and get the desired result. You stumble upon this malfunctioning trap and end up this way with no idea what you can do to undo it. You have to live with it for the forseeable future.
The reason we discuss this here is to find out if you are interested in playing the drama that results from that and learn together with the party how to live with these changes.
The benefits are nice, but they are nothing you can't simply buy if you're rich enough. I did some calculations with Tauriell and the major benefit she has from all this is two hit points per level. Because she loses her -2 Con and gets +2 instead. And +1 to will save and maybe some additional skill points for now being human.
Major benefit on Jimmy would be a slightly better dex and cha for pally things and also will +1. No additional skills, you were already human.
Edit: And also some hit points.

Good morning.
I looked how many posts Jimmy Fiddle F already wrote and it's too many to be able to change the name again. That's a shame. Because adding a female middle name would have been nice. At least if you don't want to explain your traumatic experience to everyone who we get to know good enough to introduce ourselves.
Some guy at a desk of the local bureaucracy: Your name?
Jimmy 'Sorshen' Fiddle: Jimmy Fiddle
Guy putting his pen down: That's a man's name.
Jimmy 'Sorshen' Fiddle: I know, I am a man?
Guy looking from your eyes to your boobs and back: No you're not.
And Jimmy thinks: Am I going to explain all of my life to this stupid bureaucrat or do I give him a fake name?
Welcome to the world of transgender people where everyone points at your body and says: "You're a woman, live with it."Not caring for what you're inside.
Well, all but North Carolina where they would send you to the men's room because of the law.

When you cast this spell, you can assume the form of any Small or Medium creature of the humanoid type. If the form you assume has any of the following abilities, you gain the listed ability: darkvision 60 feet, low-light vision, scent, and swim 30 feet.
Small creature: If the form you take is that of a Small humanoid, you gain a +2 size bonus to your Dexterity.
Medium creature: If the form you take is that of a Medium humanoid, you gain a +2 size bonus to your Strength.
Should that work?
Just realised it is a rule of the polymorph spells in general, so unless the specific spell says you assume the form of a specific individual you can't.
The change shape monster ability let's you change into a specific person
