Are there any officially published stat blocks for alchemists anywhere? I want to see how Quick Alchemy and Versatile Vials are presented so that I can incorporate it into the character sheets of my own alchemy-based characters.

Yeah, that was the first place I looked, but the relevant alchemical abilities are presented largely as just body text; not an organized stat block like we see with monsters of Monster Core or the NPCs from the GameMastery Guide (which is what my character sheets emulate).
Aouch. I encourage you to wait for the NPC Core then. I don't think you'll get much Alchemists before that but I'm pretty darn sure you'll get one in the NPC Core.
Most of the examples of alchemists NPCs I'm familiar with are pre-remaster AP NPCs like
