For my world, I would like all "true" giants (hill, stone, fire, frost, etc.) to be huge instead of large. Aside from just changing the size trait and perhaps reach of any attacks, is there any other adjustments "required" based on size? I don't necessarily want to change the difficulty or level of these giants. Any constructive advise is welcome. Thanks

I'd say that since you're giving them extra reach (as you should for bipedal creatures in general) you could take inspiration from Enlarge.
So, +2 damage but also Clumsy 1.
Those should be enough imo.
They hit a tiny bit harder, they have greater reach, but are also easier to hit and affect with stuff that a bigger person would have more difficulty dodging.

shroudb's idea is nice and straightforward, but keep in mind that you'd probably want to alter the monster's actual numbers, not just give it the clumsy condition. Because debuffs of the same type don't stack. So if the giants were clumsy by default, a PC ability to make them clumsy, sickened or frightened 1 wouldn't do anything.
So instead of making the monster clumsy 1, just shave 1 off all stats that would be reduced by clumsy.
