I meant, take damage, not bleeding.

I guess you could argue that whatever it was that brought the undead creature to a semblance of life requires the accoutrements of "life".

Life requires Food, Drink, Breath and certain bodily functions to work. Now the undead may not actually use or do any of this stuff but LIFE requires it!!

THUS if any of these things are denied the undead then the force that gave the creature unlife is effected.

I remember getting annoyed by how inelegant these rules are, but with the clarity of hindsight it's an ugly fudge but they wanted content so they did it and people like it so it's fine.

Liberty's Edge

I could see a strike team of Pharasmin researchers trying to collect such extremely strange kind of living undead to better understand what new strain of undeath they are dealing with.

I remember bleeding already being a mess in First edition see this post by James Jacobs for example.

They definitely chose to specify that bleeding doesn't work on non-living creatures in second edition and were aware that bleeding used to be quite confusing already in the first.
So I'm assuming quite a bit of thought went into their solution for it in second edition. So I'd just run it as written.
