How does removing slavery change the setting?

So, it seems Paizo has decided to do a blanket-ban on slavery, but it is my understanding that Lost Omens/Golarion is a rather dark setting and slavery is a big part of the darkness of the setting.

It seems to me that such a blanket ban/change would change a lot, so what exactly is affected and how shall we see the setting moving forward?

They're not removing slavery from the setting (except as just part of the natural way things might change in the background). They're putting "slavery" below the Pathfinder baseline, so they're not going to put the spotlight on it without being very careful.

Like there are all sorts of awful things that can and will happen in the setting, but not all of them are going to be talked about in books that Paizo prints. Like there might be a Demon Prince of "Autocannibalism" down there in the abyss but we're not going to put that one in an adventure.

There will never be a shortage of different kinds of oppression for people to fight against. It's not really a problem to keep the spotlight on the less horrific types of oppression for a fun-time fantasy game.

Like in practice, what's the real difference between "the PCs attack a Chellish ship that is full of slaves on the way to a bad end" and "the PCs attack a Chellish ship full of political prisoners on the way to a bad end"?

If we do then those organizations are going to be doing something other than liberation efforts or dealing with their primary missions, as I understand it the Paizo team has no intent on changing those orgs in order to pivot them toward different goals so you can expect to probably see far less of them in the future.

This won't be in effect, as far as I understand it, at least until near the end of 2022 to the middle of 2023 due to how far out in advance APs, Modules, and Rulebooks are written but after then it is going to be a theme they just don't plan on highlighting or talking about as the authors aren't comfortable with writing on the topic given how sensitive it is.

The authors and freelancers are just flat out not confident enough in themselves to feel that they are able to write on the topic respectfully nor are they able to reasonably believe the segment of the PFRPG community they listen to most closely is willing to accept anything on the topic written or produced by the current management, authors, designers, or freelancers. The only situation where I can assume that the offended consumers would be willing to accept more material in this theme going forward would be if they hired BIPOC freelancers or authors to do it, had the entire project overseen by diversity consultants, and brought in trained sensitivity readers to filter out anything that can be construed as being problematic... the net effect of this would be to dramatically increase the cost to produce such works as well as dragging out development time.

In short, it's not worth all of the hassles that it would take to continue to write about or develop the subject for Paizo in a way that they feel comfortable doing so the easiest way to handle it is to just avoid the topic whenever and wherever possible going forward.
