I'm a fan of Erik Mona's 'dragonchess' game as played in the Green Dragon Inn (Expedition to the Ruins of Greyhawk).

Are there any other examples of dice/card/board games, or encounters featuring games, that the PCs can actually play in character...

Shadow in the Sky partially takes place in a casino and includes rules for a handful of Golarion casino games the PCs can take part in.

Inner Sea Taverns has rules for some tavern games. It's a 1E book, but the games should still work regardless of edition.

The old '76 AD&D DMG had a couple games in the back you could simulate with dice I think. One of them called Knucklebones, another was a card game maybe. You could also try and find the complete rules for Dragon Poker from the Myth Inc series.
