Don't have a definite answer, myself, so I'll just spitball:
Might be product age. Pathfinder's been around a while, Starfinder is relatively new to the scene by comparison.
Also, there's a new system out for Pathfinder that seems to be more appealing than Starfinder's (casual observation), so maybe that's drawing more attention for conversion projects?
Then, of course, you have the litigious IP rights culture. No one wants the Eye of Sauron gazing from a corporate lawyer's tower. I don't know how big a deal that'd really be, tbh.

Gear conversions are the least easy - the answer is to interpolate from the existing tables.
But, of the characters you've listed, I could probably build any of them as a soldier, envoy, mechanic, or operative. You just have to build around the right theme, gear, etc.
Except River Tam, she's definitely an operative of some sort, not the others.
I think the reason you don't see a lot of '_____' as a '_____', is that the starfinder system is actually very flexible. You don't say that such character is definitely a _____. You say 'how many different ways can I build this character from popular fiction?'
For example, by cutting/lore adjusting a few classes then tweaking starship combat, you can use the starfinder system to run a campaign in: Mass Effect, Star Wars, Halo, Star Trek, Aliens, Flash Gordon, Duck Dodgers, etc.
I think one strength of the starfinder system is that you can use it as is to play any science fantasy/space opera setting with very few changes.
It doesn't work as well for harder sci-fi universes, but there are other systems for that.
