Is there a monster that has no shadow, and the reason is because said monster is so evil even their shadow couldn't stand them and left? (and if there isn't one in Pathfinder, is there a monster from mythology like that?) I know it may sound kinda silly but it's no sillier than a monster so horrible that just looking at it hurts you.

Vampires do not have shadows as a derivative of not showing a reflection (the original folklore reason being that silver is pure enough that it refuses to acknowledge them). Another undead missing a shadow is the monk-based Bhuta at least during possession. Finally, there's the Shadow Collector which needs to take other shadows to make up for the lack of their own. They're CN though, so they may not fit the pure evil idea.
If you're open to fiddling with class levels, you could have somebody who became a shadowdancer while Good (and thus manifesting a Good sadow companion) and then later turned Evil (Unlike e.g. black blades, no wording is made for shadow companions changing alignment with their masters)
