A while ago I took some bulk Italian sausage and ground beef, mixed it together and made some meatballs; a handful of them have been in a Ziploc in my freezer for over a month. Last night I wanted to make something hot but didn't just want pasta and meatballs so I took these out, diced up onions, celery, carrots and tossed in some minced garlic, sautéed that and then added a can of chicken broth and some tomato sauce, then the meatballs and finally some cooked macaroni for a soup.
I had the soup and a sandwich, it was pretty good. I threw in some basil, oregano, s&p and a couple shakes of red pepper flakes to give the soup some flavor. I'm not really much of a dessert guy but my kid left some vanilla ice cream in the freezer from this weekend so I finished off the rest of the pint. A nice night.

Have to stop STRESS EATING! Last night I'm hungry, totally stressed out and had some ground beef thawed. Ended up making tacos. No fancy cooking or anything though; meat, water, a packet of taco seasoning, and then I added a can of black beans and some jarred salsa.
Total salt overload, but I was so stressed and hungry I ate half the entire batch by myself. Today I've felt like trash all day. This weekend I'm buying some fresh fruit and veggies.

Trying a couple of new recipes this week. The first is a one-pot dish of ground lamb, chopped spinach, elbow macaroni, canned tomatoes, a diced onion, garlic, tahini sauce, and a few herbs. We'll be serving it with rolls since my kids will most likely turn their nose up at it. (But sometimes they surprise me.)
The second recipe for later in the week is to cube a couple sweet potatoes, a couple chicken apple sausages, and use 10 ounces of shaved brussels sprouts. Cook each ingredient separately in the same skillet, and then stir them together to stir. This one is just for me and my wife.
I'll update with how they go.

Got some bad news from the doctor. I have a couple of minor pre-diabetic symptoms, but tremendously high cholesterol and triglycerides. I love me some bacon, sausage, or BBQ, and I'm going to have to cut waaaaay back on those things. I've been craving some BBQ lately too.
I am not a heavy drinker, but I collect whiskey. On the plus side, it'll keep just fine if I don't drink it for a while.

So some news.
I have lost enough weight that I can take my pants off without unbuttoning them.
I can fit into my old JNCO Jeans and trip pants. I have not worn these since 2005.
I am donating my current larger jeans to my old job.
I am wearing some jeans that are my old size but are a bit stretchy with straight leg and boot cut so I do look a bit thinner.
I need to go to get a new suit or two as my current suit is literally falling off of me.
I need to exercise more so I can be more svelte, although I doubt I will ever be at my fighting weight again.
I am also getting a lot of supplements including cinnamon gummies, so I can better control my blood sugar.

I started giving up soda on the tail end of summer 2020, but it wasn't soon enough. I relapsed a bit this fall, but I'm doing a hard cut off now. I'm probably overdoing it with the sparkling water right now... but baby steps.
I made some no-bake oatballs last night that were pretty good. Rolled oats, flax seed, chia seeds, honey, vanilla, peanut butter, sugarless vegan chocolate chips (no dairy fat). Honestly they were pretty good. I think I could even use less honey and switch to a less sweet peanut butter (used regular skippy) and I'd still like them. Tons of fiber, which is key.
Just made myself some curry noodles. Cooked the noodles. Used the same pot to heat up a bag of frozen vegetables. Garlic, ginger, lots of curry powder, and kept adding coconut milk until there was enough to coat everything. Once it was nice and combined, added the noodles, along with a little more coconut milk to ensure everything was coated.
The noodles aren't great for me, but it's what I still have on hand, and it's a winter storm out.

It's far less sweet, feels more "energy bar" than tasty treat, but it's still pretty chocolaty. I also think I accidently doubled the ratio of rolled oats. I think it'll work as a low cholesterol/low sugar/high fiber snack. I might try baking it lightly.

This was pretty good! The kids liked the lamb and feta cheese (and the rolls), and pretty much nothing else. That's fine. My wife and I liked all of it. It was hearty but not heavy, and we don't eat lamb very much, so that was a treat.
The second recipe for later in the week is to cube a couple sweet potatoes, a couple chicken apple sausages, and use 10 ounces of shaved brussels sprouts. Cook each ingredient separately in the same skillet, and then stir them together to stir. This one is just for me and my wife.
This one was also good, but, despite what I said above, the recipe called for microwaving the cubed sweet potato, and the cubes were not all cooked at the same consistency. I may consider cooking them in the pan also, next time, but that takes considerably longer, and this recipe is supposed to be a quick weeknight ready meal. I may just microwave the sweet potato in two batches. Actually, I bet I can just steam them on another burner while I'm cooking the sausage and brussels sprouts.

Curry with mushrooms, red peppers, and lentils.
2 bell peppers (thin sliced)
8 ounces of mushrooms (thin sliced)
1 1/2 cups of dry lentils
1 can of low fat coconut milk
Peanut butter
Garlic (minced)
Curry powder
I use the peanut butter for it's sugar content, and the nutty flavor blends into the curry well, plus it adds a little bit of thickness, although with the lentils I don't think it was much of an issue.
Cooked the peppers and mushrooms in a dash of oil until browned and soft.
Cook the lentils separately (I used my rice cooker).
Set the peppers and mushrooms aside.
Dash of oil, heat up the garlic. Once aromatic, add the coconut milk. Add a decent size spoonful of peanut butter. Add curry powder until it have a strong enough curry taste to your preference (I start with about a tablespoon, and add more every 30-60 seconds until I'm happy). After 3-4 minutes, add your vegetables. When everything is nice and coated and the curry sauce thickens just a little bit, turn off heat and add the lentils.
I top it with szechuan chili crisp oil. A little bit of the solid chili flakes, but also the oil itself helps spread out the flavor.
Very little sugar, a little bit of fat, and a ton of fiber.

Sorry for running silent so long, have some PMs to read & reply to, and too many unread threads. Still very low on energy & time most days, and dealing with some intestinal bug right now, but I'm doing a little better mentally/emotionally now than just a couple weeks ago.

We had spam & baked beans last night for dinner. It was quick and low effort, and Dad really enjoys it, so I'm calling that a win.
Tonight dinner was late as I got roped into taking over a phone call...
Anyway, dinner tonight was pasta alfredo, except instead of chicken I used a thinly-sliced-across-the-grain strip steak, and I mixed in a thawed pouch of creamed spinach. Served it with garlic toast and it was pretty darn good. Dad definitely enjoyed it, so Yay! Since I added spinach, I'm not sure if it's still an alfredo or if it's now an a la florentine. (If anyone wants the recipe, just ask and I'll post it.)
Probably have leftovers tomorrow for dinner. I need to use up some tomatoes, so maybe I'll make salad. I also want to make a blueberry cobbler, but not sure I'll have the energy for it tomorrow.

I am officially back in the office 5 days a week now. That means that I cook my lunch in a giant pot at the beginning of the week, put it in ziploc baggies, and take one out of the fridge a day and pop it in the microwave and pour it over the rice I made in the rice cooker via timer the night before and in the funky modern bento box it goes.
I have also made further changes with respect to my diet, as well as exercise...
Lunch for the week Menu A:
1 or more onions chopped up
5 or so pieces of garlic chopped up
3 bell peppers chopped up
2 hot peppers chopped up
3 carrots chopped up
2 large baby bok choi chopped up
1 large broccoli cut up(not chopped up)
2-3 large boneless chicken breast
Enough olive oil to cook everything
Enough black bean sauce/oyster sauce to cover everything
Essentially put down a layer of olive oil, put in the onions and garic first and as soon as the onion looks cooked and the garlic smells fragrant, put in all the other veggies, and as soon as they look a bit cooked, put in the chicken. As soon as the chicken is cooked on one side, flip it, and then add the sauce and give everything a stir until everything is fully cooked and then put it out to cool. Once it has cooled, portion everything into five ziploc bags and that's it.
Lunch for the week Menu B
2 or so onions chopped up
5 or so cloves of garlic chopped up
1 smallish bag of green beans with the ends removed and cut in half
1 medium bag of baby spinach
5 pieces of fish that will withstand some rough handling(i.e. salmon, fish that has already been cooked, another type of kinky pescatorian looking for the proverbial "good time")
Enough extra virgin olive oil that will be scandalaized by the aforementioned fish as well as cook everything
Enough black bean sauce/oyster sauce to cover everything
Again put the olive oil in the pan first along with the onions and garlic, when that is looking translucent/smelling good, add the veggies, once those are done, add the fish and the sauce, lowering the flame to cook the fish carefully if it is raw to avoid burning everything or cooking the fish beforehand if you prefer. Once it's all looking close to done, add the sauce, stir it all up, put it to the side to cool. Once it's cool put it away in ziploc bags, then heat one of those bags up in the morning for pouring over rice and bento boxing.
I have also started eating much less food. Not starving myself certainly, but now that i am taking metformin with my evening meal, I find that I am not as voraciously hungry as I once was(and I am concerned that I may have been diabetic for longer than I thought). My brunch is usually a pair of hard boiled eggs, a peanut butter and jelly sandwich on super whole wheat bread, either harvest cheddar sun chips or olive oil and sea salt triscuits with slices of cheddar cheese(or another type of brick cheese), and a considerable amount of apples, bananas and oranges. This almost always means I don't actually EAT my lunch, and instead save it for dinner along with whatever meds I am taking a my small army of suppliments(most of them are gummies, which I truly enjoy. GUMMIES!). If I am hungry after that, dessert is a bowl of frosted mini wheats(although I miss the regular size wheats and the BIG wheats). I usually only drink water throughout the day, along with a variety of hot teas, usually green. I am feeling a LOT better healthwise, but as I only recently started this new job, I don't have insurance yet so I will have to wait until next month to see my doctor and see if he is as happy about this as I am.

Freehold, that's awesome insight to a healthy diet. What's the difference between cut up and chopped up broccoli?
chopped up broccoli kind of falls apart before long when cooked in the pan, there isn't much holding it together. It's better to cut it off at the stems and stir fry the little trees, not chop up the bushes and turn them into mulch.

I haven't been cooking a lot lately. I don't know, I think its a depressive episode. I've just been making a lot of soup and sandwiches for dinners.
Last night I changed it up a little. My daughters had been here a couple nights ago, made spaghetti with a meat sauce. Well, I had one lone green pepper about to go bad in the crisper so I took the meat sauce, added a bit more canned tomato sauce to it, then barley and some frozen veg, stuffed the pepper, then topped it with some parmesan and Colby jack cheese and baked it.
Not bad. Had it with a little side salad. But I also had a glass of cab sauv that ended up turning into 2. I suppose that was dessert?

Hope it eases up on you soon, Mark. Ooo, a cab sounds good right now.
And kudos to you, Freehold, for managing such a shift in culinary habits and thinking to keep your diabetes in control. My younger nephew loved eating the "leafy trees" -- so much so, his mom had their doc run blood tests on him to make sure he wasn't seriously vitamin deficient (he was fine). But he has a lot of weird dietary preferences. I mean, who hates gravy? I can understand terrible gravy, but delicious gravy made from slow cooked homemade au jus? Even milk gravy for fresh biscuits?!

Two quartered boneless, skinless chicken breasts in half a bottle of bottle of teriyaki sauce have been simmering in the slow cooker for about an hour now, and I finished a basic salad to go with it. Not much energy left, so don't know if I'll get some deviled eggs done in time for dinner or not.

So last night was interesting. I cleaned out some stuff in the crisper and pantry and made a hackneyed broccoli salad. Homemade mustard vinaigrette dressing, some shredded baby carrots (that was fun not trying to kill my fingers doing fyi), and broccoli steamed in lemon juice, mixed and cooled in the fridge, then taken out and tossed with some slivered almonds and raisins.
Now, I'm not a fan of sweet so I made a turkey sandwich to go with this. Still, it ended up being pretty good. Rather than save the half a bowl of leftover salad though I chucked it. The girls aren't going to eat it and I just didn't like it enough to hold onto it.

Bought two 14-oz steaks for my fiancee's birthday last weekend, and spent the first half of this week soaking them in a modification of this marinade. Said birthday was yesterday, served them up medium rare (after multiple times of pulling them out of the oven to jab with a thermometer, I think I have a general idea of how much time it takes to cook now going forward) with baked potatoes and broccoli. Turned out pretty good!

OTF is being pretty quiet lately; hope everyone is doing well, or as well as expected given the current times.
Sunday night was slow braised chuck roast/pot roast. Twenty minutes before dinner I took the roast out of the dutch oven to rest. I was out of potatoes to have baked around it, so I whisked in a packet of gravy mix into the meat juices/chicken stock in the pot, then dumped in a heaping 2 cups or so of dry egg noodles. Back in the oven on 275F for 15 minutes. Served with a canned green beans warmed up on the stove with a little butter & bacon drippings (& salt & pepper). Went well, and Dad loves his egg noodles.
Tonight I'm slow baking BBQ pork loin chops in the oven on low. I just put in the baking dish of extra-cheesy au gratin potatoes next to the chops for the last 45-50 minutes, then will broil for a bit uncovered to get some color. Made enough for leftovers tomorrow.

Lunch is usually rice with the mixed veggies described before and fish.
Dinner is usually something more substantial, last night was spaghetti with meat sauce and whatever veggies I had and I could toss in.
If it's not tea I'm drinking water.
I am trying to be good.
If i get a bad sweet tooth I usually have frosted mini wheats.

Hang in there! It does seem to get a bit easier for many once it becomes routine and more second nature.
Mom was pre-diabetic, and she would sneak in a little sweet snack by having it immediately following her meal to lesser the blood sugar spike. Sorry, I shouldn't be tempting you.

Sometimes krispy Kreme ends up in my general area and I end up closing my mouth and it somehow found its way in and I am already chewing so...
Mom was usually a bedrock of willpower, and even she used to slip up from time to time. I think everyone does. I think all you can try to do is recognize that an occasional treat is ok, even mentally healthy, as long as it doesn't become a frequent occurrence.
I'm not one to talk. A couple weeks ago, Publix had a manufacturer's digital coupon for a free can of Coke with Coffee. And when I ended up on that aisle (detouring away from other shoppers) and spotted it on the shelf, my willpower crumbled, I activated the coupon, and got it. Got it home feeling like 8-yro me buying a 2lb bag of Brach's Starlight Mints, stuck the can in the back of the Dad's fridge out of sight, and tried to forget about it. Didn't work. I made it less than 48hrs, and had it very cold over ice (even colder, because I like my sodas to be brain-freezy) at 3AM... and my god, I have never had a soda that delicious. Afterward, I no gut pain, and I had no gout symptoms the next day or day after. I am haunted even now by the urge for a very cold Dr. Pepper, but so far I'm avoiding the soda aisles in the grocery stores.

Tonight was leftover BBQ chops, au gratin potatoes, and fresh-baked rolls.
Dinner tomorrow will probably be boneless chicken breasts some way, don't know what yet. Last time, I'd cut them in half, pounded them a bit, and marinated in homemade Italian dressing for a couple hours before grilling. Time before that was splitting them, pounding them, then double-dredging in seasoned flour for fried chicken. Not sure how I'll do them this time, not feeling particularly energetic right now. Need to go grocery shopping tomorrow, but not feeling energetic for that either.

I really need to pick up cooking, and cooking that isn't just eggs
Do you have an oven-safe skillet? Do you like kettle potato chips? Maybe try something like this version of a Spanish tortilla and scale the recipe ingredients back to 1/2 or a 1/3 depending on if you're feeding someone else too or just yourself? Regular chips will work fine, but kettle chips are a bit more "caramel-ly", and I'm sure flavored chips would work very well. A little caramelized onions or browned chopped bacon/sausage/chorizo mixed in would probably be very good too.

Actually this is something both my dad(hi dad! I'm loving my new job and am waking up at 5 in the morning almost every morning! WORKING! WORKING! For now I think I an going to stick with frosted mini wheats because of increased fiber intake.

Sometimes krispy Kreme ends up in my general area and I end up closing my mouth and it somehow found its way in and I am already chewing so...
Mom was usually a bedrock of willpower, and even she used to slip up from time to time. I think everyone does. I think all you can try to do is recognize that an occasional treat is ok, even mentally healthy, as long as it doesn't become a frequent occurrence.
I'm not one to talk. A couple weeks ago, Publix had a manufacturer's digital coupon for a free can of Coke with Coffee. And when I ended up on that aisle (detouring away from other shoppers) and spotted it on the shelf, my willpower crumbled, I activated the coupon, and got it. Got it home feeling like 8-yro me buying a 2lb bag of Brach's Starlight Mints, stuck the can in the back of the Dad's fridge out of sight, and tried to forget about it. Didn't work. I made miso soup today. I ordered some dashi to add to it for tomorrow's soup, it tasted juuuuust a bit off without it. It was part of my breakfast and it really helped me to feel quite full. I'm thinking this is a good addition to my routine overall.
Soup is miso paste, very firm tofu cubes, green onion, seaweed and two of the aforementioned hardboiled eggs. Again, dashi will be added tomorrow. No extra salt or sodium of any kind.

I made this on Wednesday, I'm going to make it again tonight.
Carb heavy noodles are out, so I replaced them with a combination of zucchini spirals and brown rice. It worked really well. Also, it was very easy to make.
I've made tofu in a couple other dishes before, and they always end up looking like scrambled eggs anyways, so a recipe that just tells me to do that ahead of time was right up my alley.
He has another video on chili oil that I'm going to try making next week.

I don't get it. A Spanish tortilla with potato chips is so simple to make, you should be making it yourself, Freehold. And eggs, cheese, butter, onions, chorizo/bacon are all low carby, and the chips shouldn't be too bad in moderation. The toughest part may be having the oven-safe skillet/frying pan and an oven.
I wouldn't recommend the traditional method using sliced raw potatoes though, as most mandolines are hungry for flesh and blood.

I made not-so-white chili last night for dinner. It was just the pre-packaged seasoning mix, with a whole medium onion diced & sweated (cooked till translucent, not browned), half a head of garlic peeled & minced, and a 15oz can of fire-roasted diced tomatoes. I used about a 1-1/4 lb of boneless skinless chicken breasts (because Dad won't eat dark meat) cut into short strips, and reduced-sodium chicken stock in place of the water called for by the instructions. Instead of the canned cannellini beans, I just used a cup of dry pintos that I soaked in salt water for a couple hours first. Just put everything in the slow cooker for about 4-1/2 hours on high. The chili turned out ok -- Dad seemed to enjoy it with a slice of leftover cornbread -- but it seemed to be missing something.
We're having it again for leftovers tonight, not sure about tomorrow. On Sunday, my sister's husband is smoking some ribs, so that'll be delicious.

Going to be eating a lot of chicken in the immediate future.
So, every Easter that my kids are at mine, I make a ham. This year my elder daughter is dating a man that doesn't dig on swine, so I got a whole roasting chicken instead. We had plans for the kids to come over in the early afternoon.
Plans changed. Part of it was my... frustrating co-parent, part of it was unexpected happenings at my daughter's bf's house, but I had already started roasting the chicken, so last night I just finished the bird, didn't make any of the sides, and had chicken and rice with a pan gravy and a side salad.
There is a ton of roast chicken leftover. I have 2 bags in my freezer; one is bones and some small amount of meat, the other is just the bird. Right now I'm planning some chicken burritos, homemade stock, and a chicken/rice casserole. I don't know if that'll use all the leftovers up but that's what I've got so far.
Thing is... now I've also got a bunch of potatoes that I'd planned to add cream, butter and some fresh dill to for mashing, some fresh strawberries and spongecakes along with a can of whipped cream, a mess of fresh green beans and lots more salad fixings. I won't have both my girls over here for another week; what am I going to make with all this?

Yep, chicken and mashed potatoes freeze pretty well, so I'd portion them out for quick individual meal prep/leftovers. I think Aldi still has pre-made pie crusts in their refrigerated section, so the chicken + gravy + green beans (may need to be cut smaller) would work well assembled into a family-sized chicken pot pie. I can get a 12oz bag of store-brand frozen mixed vegetables (green peas, chopped carrot cubes, corn, and chopped green beans) for a little more than a buck, so you could mix those into the chicken pot pie and save your fresh green beans for a green bean casserole. The pot pie and casserole would probably work well if assembled into individual ramekins and frozen too, but you'd probably need extra pie crust.
Ooo wait, put a single pie crust on the bottom, add your chicken pot pie mixture, and then top with the mashed potatoes like a chicken-based shepherds/cottage pie.
You could also turn the chicken into chicken enchiladas in a baking dish with some shredded cheese, Mexican tortillas, and canned enchilada sauce.

I made hamburgers on the gas grill for dinner Saturday night, served with potato chips.
Sunday was the Easter dinner at my sister's house. I brought coleslaw (pre-shredded cabbages & carrot blend + seasoning pouch + little sugar & apple cider vinegar), that's all she'd let me bring. She made an excellent strawberry layer cake and Mom's recipe for potato salad. He husband all-day-smoked at least three full slabs of beef ribs: one with just salt & pepper, one rubbed with Everglade's seasoning rub, and one mopped with a St. Louis-style BBQ sauce. We all ate very well indeed, and there were plenty of leftovers that Dad & I had them again tonight for dinner.
It's an excuse to eat Ryskys cooking.

It's been in the upper 60s-lower 70s many of the last several nights here, and the grey stray kitty has been sleeping right in front of the fridge on Dad's back porch right in front of the bottom vent where the heat blows out. So if you raid the fridge, please don't startle him too badly and leave him a small tithe of people food for his guard duty.

So last night I did 2 things w/the potatoes. I made a mess of mashed potatoes with dill, froze most and threw some in the fridge for beef based shepherd's pies I'm going to make tonight. The last three I took and sliced on the mandolin of my grater box and made a ham and potato bake casserole thing for dinner last night.
Of course, I didn't finish all of that so that'll probably be the side to a couple meals the next couple of days. Still, it turned out pretty well. I diced up the green beans, added a small can of corn, and then did potatoes in a cream sauce with shredded cheddar cheese.
I've still got some green beans left I haven't done anything with; maybe I'll just chop and blanch those, throw 'em in a couple freezer bags too. The strawberry shortcakes are probably not going to happen. I've never been much of a dessert guy so I've just been eating strawberries on the side with my lunches.

I have a pile of dandelions picked and prepped a week ago and then life's circumstances has prevented me from cooking them all week. We'll find out tonight whether they are still any good to cook. (And they may also be bitter as f*+~ anyway, but we'll see.)
For Easter it was me and my dad. We did a for-two version of what larger family gatherings used to feature for Easter... a couple of small ham steaks (instead of a whole roast ham), potato salad, cole slaw, pickled beets. (You are supposed to put hard boiled eggs in with the pickled beets so then they're all pretty, but he and I don't like hard boiled eggs enough to bother).
And then we usually have asparagus, but I couldn't find any at the farmer's market, but I did find fiddleheads and bought those, even though they were priced at a level that probably woke my grandmother from her grave and then sent her right back to it ($11 for about a pint). Fiddleheads (baby ostrich fern sprouts) were a "necessity" green eaten by my ancestors in northern Maine, as they were (along with dandelions) one of the first green things you could eat in early spring before you could get your vegetables planted. They loved them, but it was definitely poor farm people food. Now urban hipsters and yuppies have discovered them and eat them as part of their pastoral fantasy of "authenticity" so they pay premium prices to eat what northern Appalachian farm folk ate 'cause they had to. And I paid the premium prices because, hey, nostalgia's sake, and fresh spring green. My dad was delighted to see them and I did not tell him what they cost.
They aren't actually my favorite flavor, but they are interesting (taste sort of like asparagus, but... sharper?) and more than nice slathered in butter and cider vinegar.

Thursday night was fried sliced spam & french fries (from frozen). The air fryer I inherited from my sister only goes up to 400F, which isn't enough to get the fries crispy, so I fried the fries in a skillet on the stove (about an inch deep of canola oil with 1/3 cup or so bacon drippings). Spam was just fried without any oil in a separate skillet.
Friday night was frozen supreme pizza and small salad.
Saturday night was tacos (seasoning from pouch, diced tomatoes, shredded lettuce, shredded sharp cheddar, sour cream, and store-bought taco shells).
Tonight was grilled Italian chicken (boneless skinless breasts, cut into fillets, marinated & basted in Italian dressing), instant mashed potatoes (made with milk & butter instead of water), roast chicken gravy (from a pouch & chicken stock), frozen sliced carrots (butter, a little water, a pinch nutmeg & ground cloves, and a good squeeze of honey), and garlic toast (from frozen). Probably have the leftovers for dinner tomorrow.
I have to go grocery shopping tomorrow for more milk, tomatoes, and fruit hand pies for Dad's breakfast. I'll probably be making either pineapple upside down cake or maybe finally that blueberry cobbler.
