We're starting a new game in a couple weeks and I'm planning to roll a Dwarf Alchemist. As I am currently running a PF2 game, I've seen now nasty poison can be against players and a combination caught my attention: Hardy (ancestry) and Poison Resistance (Alc4). I can't seem to find mention anywhere of resistance of the same type stacking or not stacking. Have I overlooked something or has this been addressed elsewhere?

Oops -- I missed the earliest part of Hardy and was looking at the part that was different from Poison Resistance.
But CapnBeav's answer does appear to be the right one. The only way that the sentence at the top of the right column on page 294 could mean anything is if two different instances of poison resistance don't stack. Obviously, resistances to unrelated things wouldn't stack since it would be virtually impossible for them both to apply to a single instance of damage -- so that sentence must be referring to resistances to the same type of damage from different sources.
I will readily concede that the language describing this lack of stacking could definitely use some improvement.
