How should I go about his character idea, if I can? I know that three hands are considered off-hands for a kasatha, but how will that affect “two-weapon fighting”? I figured that I might worship Szuriel for her sentinel boons; +4 to hit with greatswords is a pretty big bonus. Fighter would help with the feats.

The first sword will be considered being wielded in your primary hand, and the second one will be considered to be using your off hand. Since neither of them are light weapons you will be taking the higher penalty. That means without the feat you take -6 on the first sword, and -10 on the second. With the two weapon fighting feat you take -4 with each sword.

It's a LOT easier to make this work with 2 bastard swords than greatswords, as both effortless lace and effortless dual wielding work. With greatswords, you're stuck with the -4's for two weapon fighting.
You might want to look into the feat, Hand's Autonomy. It'll drop the -4 to -2's but it'll take a second feat to get and you miss out on a bunch of goodies for not using a light/one handed weapon.

TWF does not allow you to use two-handed weapons. Only one-handed and light weapons.
The published adventure The Divinity Drive disagrees with you. Metweska, a kasatha NPC, uses 2 chainsaws in two weapon fighting with a -4 to each weapon.
Secondly, the two weapon fighting rules never mention one handed weapon, other than thrown weapon handedness. Offhands are either light or not and that's it. So nothing in the actual written rules.
Thirdly, hands of effort should allow a kasatha 4 hands of effort, 1 main and 3 offhands. Nothing in this disallows a two handed weapon, or 2 two handed weapons, in two weapon combat. They are disallowed by 'normal' PC's because of insufficient hands but that's not the case when you have 4. So nothing in the unwritten rules we've been told about.
Fourthly, two handed weapons only require 2 hands. It's never said that they require a main hand. As such, two off hands work.
If the PDT DON'T want 3+ handed creatures to use two handed weapons in two weapon combat, they'll actually have to answer one of the many FAQ posts about it like they did for 2 handed creatures. As it stands, I can't see a rules based reason they can't work.

Off-hand weapon is light –4 –8
Two-Weapon Fighting feat –4 –4
Off-hand weapon is light and Two-Weapon Fighting feat –2 –2
The off-hand weapon is either light or not light. Two-handed weapons are not restricted beyond being "not light."
