My question is: would a creature with paralysis immunity who failed its save against my Ice Tomb hex be still encased in ice because the spell also states that the subject is also unconscious or would the Paralysis immunity prevent also the unconscious effect?
I think the first option is the correct one but I have some doubts.
I would think the first. They'd be immune to the paralysis effect but still be unconscious, so fat lot of good the immunity would do them.
Now if they were immune to cold, they would be immune to the whole thing.
Yes, I know about the cold immunity. About being unconscious and paralyzed my guess is that both facts are independent from the other but both dependent of the cold. So my guess is what you said.
Like those cumulative effects that state: if you fail the save you are feeling a bit off, with a big headache, sick, very sick, suffering a terrible agony and dead. If you are immune to death effects the former still take place.
Anyone else can say which option is right?

Immunity to paralysis has absolutely nothing to do with immunity to unconsciousness.
Yup. The ability does two things on a failed save: cause paralysis, cause unconsciousness. The two are unrelated, except that they are caused by the same thing. Immunity to one is irrelevant to the other and vice versa.
