I have a player that has a Sun Blade. It does an extra +2 hit and damage versus evil creatures.
Now, does that "evil" creature have to be of a subtype that is innately Evil, like Evil Outsiders (demons, devils etc) or does it just have to be Evil aligned for the purposes of the enchantment?
This same question applies to Holy enchantments on weapons?

It deals an extra 2d6 points of damage against all creatures of evil alignment.
Against evil creatures,
Evil alignment is all that is required. They will be specific if they mean for an abilty to only target a specific subtype. Compare to a paladins smite evil. Where a distinction is drawn between just being evil and being an outsider with the evil subtype.
If this target is evil,...
...If the target of smite evil is an outsider with the evil subtype, an evil-aligned dragon, or an undead creature...

It also works on creatures with the [Evil] subtype, regardless of actual alignment
Most creatures that have this subtype also have evil alignments; however, if their alignments change, they still retain the subtype. Any effect that depends on alignment affects a creature with this subtype as if the creature has an evil alignment, no matter what its alignment actually is.
Meeting a redeemed [Evil] creature is rare enough, but fighting it with a good aligned weapon is pretty much a non-occurrence (Mind control is the only time it's ever going to happen)

^Previously, the Asmodean/Thrunite propaganda machine was using front groups to spread rumors about disguised Demons (dispersed from the now-closed Worldwound and now affiliated with the Demonic State of Isger and Cheliax) infiltrating orphanages in Isger -- of course, those run by the Sisterhood of the Golden Erinyes had the discipline to see through such infiltration immediately, but some competing orphanages might be susceptible.
Of course, openly being a Demon is probably illegal in Isger -- regardless of whether this is technically true, it is almost certainly so for practical purposes. So the redeemed Demon had to be disguised just to get to work. Of course, the Asmodean agents were nowhere near the Paladin's Detect Evil range when the Paladin was following up an anonymous tip about a suspected case at that orphanage jointly run by the churches of Sarenrae and Shelyn . . . .
