Take a Spectre and add levels in unchained monk. Technically, the advancement rules state that monk is always considered a non-key class (+1 CR/2 class levels), but I think +1 CR per level is appropriate.

Give said creature the Feral Combat Training feat that allows it to flurry of blows its slam attack. Incorporeal, potentially ridiculous AC (dex, wis, AND cha), and the ability to easily energy drain 6+ levels per round on a (at minimum) CR 8 critter.

Prepare get-away vehicle in case of rioting players.

Seriously though, he sounds like the perfect end to an adventure centered around an abandoned haunted monastery. ("He still awaits pupils who can prove themselves worthy.")

Just don't spring it on them unexpectedly...

Spectres don't possess a Slam attack, and I don't think Feral Combat Training would be eligible for a Touch attack, especially ones from an Incorporeal. I'd need a citation or some sort of proof to be convinced.

Doesn't even have to be an Unchained Monk, a standard Monk would do just fine, since they still get saves, feats, etc. Throw on a strong Archetype with Qinggong to get some intriguing SLAs, and you got yourself a very versatile Incorporeal.

Even going with a Greater Grapple method would net you up to 3 level drains per round, and they're effectively screwed if they get caught by themselves.

The Kensai Levels could be a good idea if we're talking an endgame BBEG. But you can't really afford dipping it without really ramping up the CR.

Imagine the effect of you stacking dozens and dozens of Advanced templates on top instead of more class levels. Maybe toss some Antipaladin levels into the mix later, and a couple more Magus levels. Then you can Smite Good on a party member while using Arcane Accuracy! If you want to, you can try picking up a Guided Ghost Touch weapon or use an Agile Ghost Touch weapon with Weapon Finesse.

This was true in 3.5; however, as of Pathfinder, it is no longer the case.

I made this mistake a couple of times myself. ^_^
